Ever since my first use of the BrewBuilt X2 unitank fermenter, I've been dealing with it's inability to hold pressure. After eventually solving the problem and hearing from others with the same issue, I decided to make this quick video showing what I did. Vienna Lager Update: 2023 Recipe & Process Changes
I recently made several changes to my recipe and process for making an excellent Vienna lager. I think all of them contributed to a better beer than before. Changes include:
● Brew Day: Grains, hops, yeast and mash changes
● Fermentation: Used the new 14 gal BrewBuilt X2 Jacketed Uni Conical Fermenter
● Cold Crash & Fining: Used a 1 micron beer filter system to fine the beer.

Blanching Sweet Corn with the Spike Brewing Solo Basket
It's that time of year where Illinois sweet corn is ready to eat and to preserve for eating later. I bought a whole sack (50 ears) this time and didn't want to do it in batches on my stove, so I pulled out some of my home brewing equipment (a 20 gallon Spike Solo System and a 20 Gal Spike Brewing Kettle) and blanched it all at once in my garage.
Now I have another year supply of blanched vacuum sealed corn in my freezer.

Fermented Hot Sauce Via the Pepper Mash Method (Part 1)
End of summer is the time of year where I begin fermenting some of my harvested garden grown peppers in preparation for turning them into bottled hot sauce. This year my harvest consists of Habanero, Tabasco, Melrose, Havasu peppers, and some San Marzano tomatoes.
I like to use the pepper mash method instead of a brine to ferment peppers. Has worked great for me since I began fermenting pepper several years ago.

2022 Crown Point Rib Competition Road Trip
Another year; another contest. It's time for my annual trip to Crown Point, Indiana for the annual Pentwater Rib Competition. Hoping to regain my title in 2022. This is going to be fun!
I used my traveling kamado, a Broil King Keg 5000 attached to my trailer hitch, again to cook three racks of St. Louis cut spare ribs for the competition assisted by my BBQ Guru CyberQ Cloud temperature controller.
I also had to create my own rub and sauce this year due to my go to winning rub and sauce combination being no longer available for purchase.

Italian Beef Sandwich with Melrose Peppers; Cooked Using the SNS Grills Drip 'N Griddle Pan
Another iteration of the Chicago Italian Beef Sandwich. This time coated with fresh herbs, garlic, and onion then cooked on a roasting pan (the Drip 'N Griddle Pan) in the SNS Kamado and served with a mixture of fried sweet Melrose and hot Havasu & Fresno peppers.
Recipe:
Ingredients:
3-4 lb eye of round roast
Handful of fresh rosemary, minced
Handful of fresh oregano, minced
Handful of fresh thyme, minced
Handful of fresh basil, minced
Red onion, minced
6+ garlic cloves, minced
Salt, enough to dry brine the meat.
Black Pepper, 1+ tsp
Olive oil
~3 cups water in drip pan under meat
3 cups beef broth
Sweet peppers (Melrose in this video)
Hot peppers (Havasu and Fresno in this video)
Fontina cheese, shredded
Turano rolls
Directions:
1) Dry brine roast overnight.
2) Mix rub ingredients (herbs, garlic, onion, black pepper) together with enough olive oil to turn into a paste rub.
3) Apply paste rub to meat.
4) Set up grill for indirect cooking at ~300-325 F.
5) Place rubbed meat on roasting pan on indirect side of grill.
6) Cook for ~2-3 hours until 135 F int temp.
7) Remove from grill, and let cool.
8) Save meat drippings in fridge for later.
8) Wrap meat in plastic wrap, and chill in fridge overnight.
9) Unwrap meat. Slice meat thin.
10) Prepare beef broth, and add reserved meat drippings. Heat to 145+ F.
11) Fry peppers in olive oil.
12) Make sandwich.
Pour juice on opened roll.
Add meat.
Add peppers.
Add cheese.
Add more juice if desired.
