I looked out the window…my heart went out to her, we welcomed her into our home, and for 15 years she was my constant companion. We lived on acreage for the first 10 years, so I took her for long runs. I drove the Gator and she ran to keep up. She was truly my little Zoom-Zoom. She was happy when we went for a drive and raced to the car door. She was happy when we got home and she had to run and find Beth to tell her we were back. She was happy when we went outside. She was happy when we came back in. Her perpetual happiness brightened our daily lives. Zoom had a habit of poking my leg with her wet nose. When it was time to go out, she would poke me to tell me she was ready. When I got the keys to go for a drive, she would come from behind and poke me to let me know she was right behind me. It was her way of reminding me she was there. Then we grew older… and it was time. When I got back to the empty car the song on the radio was “There’s Nothing Better Once You’ve Had the Best”. It was true. We had 15 years together and they were the best. And, when I think of her my lips smile… because I cherish the memories, while my eyes water… because I feel the loss. It’s a warm feeling to both cherish and miss a loyal friend. I believe in reincarnation and maybe… just maybe… a day will come when I feel a wet nose poking my leg, looking up at me and saying…”hi, it’s me… I’m back”. I truly pray for that day. This is a must watch video… it demonstrates a couple very simple techniques which make it easier to handle and shape no-knead dinner rolls. (1) An innovative process called “degas, pull & stretch” which uses the handle end of a plastic spoon to manipulate the dough (like a dough hook). The process reduces the size of the dough ball by 50% and replaces the process of folding. (2) I dust and coat the dough with flour in the bowl. No more sticky dough! When the dough comes out of the bowl it will be easy to handle and divide into portions. And (3) I use bakeware to shape the rolls. Just “plop” the dough in the bakeware and Mother Nature will shape the rolls. This technique can be used to make dinner rolls using either the “Turbo” or tradition no-knead method. No equipment... no problem. You can make a batch of artisan quality bread with a spatula and a bucket. To make it even easier… I designed the recipe around a 5 lb bag of flour so that I wouldn’t have to do a lot of measuring… then I took a large pitcher and marked 60 oz on the side which makes measuring water fast and convenient. And I understand, it’s impractical to have 5 Dutch ovens and difficult to shape no-knead dough… don’t worry, all you need to do is divide the dough and “plop” it into the pan. You’ll be pleasantly surprised with how easy it can be to make bakery quality bread in batches.
