Fresh Fish with Florida Orange Sauce on the Blackstone Griddle
Blackstone GriddlesTodd had an unforgettable day fishing on the Florida Gulf Coast with his kids, reeling in some beautiful speckled sea trout. He paired the fresh catch with a vibrant Florida orange sauce for a dish full of flavor and sunshine. A perfect way to enjoy the bounty of the Gulf Coast with great company and stunning views! Fresh Fish with Florida Orange Sauce: https://blackstoneproducts.com/blogs/recipes/fresh-fish-with-florida-orange-sauce Ingredients 1 orange Honey (to taste) Soy sauce (to taste) Cooking oil 2 cloves fresh garlic, diced (or garlic paste) 1 tablespoon fresh ginger, diced (or ginger paste) 1 small red bell pepper, diced 2 pounds fish fillets (your choice of type) Salt, to taste Black pepper, to taste 1 pound pre-cooked yellow rice Fresh cilantro (for garnish) Directions 1. Cut the orange in half. Squeeze the juice into a small bowl. Zest the peel and add it to the bowl along with honey and soy sauce. Mix well and set aside. 2. Place a cast-iron skillet on the preheated Blackstone griddle over medium heat, or use the side burner if available. Add cooking oil, diced garlic, diced ginger, and diced red bell pepper. Stir and sauté until fragrant and softened, about 2-3 minutes. 3. On the griddle, place the pre-cooked yellow rice and add a little oil. Stir to warm it up and keep it moving so it doesn’t burn. 4. Pour the orange, honey, and soy sauce mixture into the skillet with the garlic, ginger, and bell pepper. Stir everything together and let it simmer for 3-4 minutes, allowing the flavors to meld. 5. Pat the fish fillets dry with a paper towel. Rub both sides with a light layer of cooking oil, then season with salt and black pepper. Place the fillets on the griddle and cook for about 4-5 minutes per side, or until the fish is golden and easily flakes when tested with a fork. 6. Once the fish is cooked, remove the rice from the griddle and place it on serving plates. Lay the fish fillets on top of the rice. Spoon the warm orange sauce over the fish to taste. Garnish with fresh cilantro and lemon slices. Greek Board Lamb Skewers: https://blackstoneproducts.com/blogs/recipes/greek-board-lamb-skewers Ingredients 3-4 lb boneless leg of lamb, cubed small Marinade ⅓ cup avocado oil ⅓ cup olive oil 4-5 fresh garlic cloves, grated 1 tablespoon fresh oregano, chopped 2 tablespoons Blackstone Tuscan Herb seasoning ¼ cup red wine vinegar For the Veggies 2 zucchinis, sliced 1 red onion, chopped 1 pint grape tomatoes ⅓ cup olive oil Blackstone Tuscan Herb seasoning, to taste For Serving Naan bread Blackstone Tuscan Herb seasoning, to taste Took Garlic Dip Spread Tzatziki sauce Directions 1. Cube the lamb into small pieces and add it to a large bowl. In a separate bowl, mix together the avocado oil, olive oil, grated garlic, fresh oregano, Blackstone Tuscan Herb seasoning, and red wine vinegar to create the marinade. Pour the marinade over the lamb, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours or up to overnight. 2. Thread the marinated lamb onto metal skewers. Preheat the Blackstone griddle to medium heat or use a pizza oven. Place the skewers over the cast iron skillet or on a foil-lined tray. Cook the lamb, turning the skewers as needed, until the meat is charred and cooked through. Cooking time will vary based on the size of the lamb cubes and your desired doneness. Once cooked, remove from the heat. 3. While the lamb is cooking, toss the sliced zucchini, chopped onion, and grape tomatoes in a bowl with olive oil and Blackstone Tuscan Herb seasoning to taste. Griddle the veggies on medium-high heat for about 3-5 minutes, stirring occasionally. At the same time, toast the naan bread on the griddle, flipping to toast both sides. 4. Serve the lamb skewers, griddled veggies, and naan bread family-style on a large board. Add garlic dip and tzatziki sauce for dipping. Enjoy!
