Spicy Cashew and Turkey Stir-fry

Quick, Easy and Healthy weeknight meal idea - Spicy Cashew and Turkey Stir-fry with vegetables of your choice.

Ingredients (serves 2-3):

380 gms Turkey pieces

For marinading Turkey: 1/2 tsp salt, 1/2 tsp hot chilli pwd (Or Cayenne Pepper), 1 tsp Corn Starch and 1 tbsp Soy sauce

1 small onion, 1 tbsp soy sauce, 2 cloves of garlic, Vegetables of your choice. I use carrots, Brussel Sprouts, Bell peppers, Mushrooms, Zucchini, 2-3 tbsp Oil for cooking, 1 tbsp Soy Sauce, 1 tbsp Vinegar, 1/2 cup Cashews, 2 tsp Sesame Seeds, 1/2 tbsp Hot chilli sauce like Sriracha (you can always add lemon juice on top for more flavour)


1. Cut Turkey into bite size pieces and marinade for 10 mins.

2. In a wok, heat 2 tbsp oil and fry onions and garlic for 2 mins. Add soy sauce, vinegar and chilli sauce. Add vegetables and stir-fry for 3-4 mins. Set aside.

3. Fry cashews and sesame seeds for 2 minutes in another pan. Add Turkey and cook until done.

4. Combine vegetables and turkey and serve warm on its own or over plain rice, noodles or with a flatbread. Enjoy!
