Spicy Cashew and Turkey Stir-fry

Quick, Easy and Healthy weeknight meal idea - Spicy Cashew and Turkey Stir-fry with vegetables of your choice.<br />

Ingredients (serves 2-3):<br />
380 gms Turkey pieces<br />
For marinading Turkey: 1/2 tsp salt, 1/2 tsp hot chilli pwd (Or Cayenne Pepper), 1 tsp Corn Starch and 1 tbsp Soy sauce<br />
<br />
1 small onion, 1 tbsp soy sauce, 2 cloves of garlic, Vegetables of your choice. I use carrots, Brussel Sprouts, Bell peppers, Mushrooms, Zucchini, 2-3 tbsp Oil for cooking, 1 tbsp Soy Sauce, 1 tbsp Vinegar, 1/2 cup Cashews, 2 tsp Sesame Seeds, 1/2 tbsp Hot chilli sauce like Sriracha (you can always add lemon juice on top for more flavour)<br />

Method:<br />
1. Cut Turkey into bite size pieces and marinade for 10 mins.<br />
<br />
2. In a wok, heat 2 tbsp oil and fry onions and garlic for 2 mins. Add soy sauce, vinegar and chilli sauce. Add vegetables and stir-fry for 3-4 mins. Set aside.<br />
<br />
3. Fry cashews and sesame seeds for 2 minutes in another pan. Add Turkey and cook until done.<br />
<br />
4. Combine vegetables and turkey and serve warm on its own or over plain rice, noodles or with a flatbread. Enjoy!
