Dry Brine Turkey with Cheesecloth Method
Ingredients:
• Dry Brine: 4 tbsp sea salt, 1.5 tbsp brown sugar, fresh herbs (rosemary, thyme, mint, sage), 2 tsp granulated garlic, 2 tsp paprika, zest of orange & lemon.
• Turkey: 12 lb turkey, stuffing (apple, orange, onion, lemon, sage, thyme), for tray (carrot, onion, celery, chicken broth), cheesecloth, 1 can of beer, 1/2 cup melted butter.
• Herb Butter: 300g softened butter, zest of 1 lemon & orange, chopped fresh herbs (rosemary, thyme, sage), 2 tsp paprika, salt, pepper, 5 garlic cloves.
Instructions:
1. Mix dry brine ingredients. Rub over and under turkey skin. Refrigerate 24-48 hours.
2. Remove turkey 4 hours before cooking. Pat dry.Preheat oven to 340F.
3. Make herb butter, apply to turkey.
4. Stuff turkey with apple, orange, onion, lemon, sage, thyme. Tie drumsticks.
5. Arrange carrot, celery, onion, broth in tray. Insert Typhur Sync thermometers.
6. Mix melted butter and beer, soak cheesecloth, cover turkey.
7. Roast, basting every 45 min. Cook until internal temp is 165F. But for the best juicy breast I remove Turkey from oven when the temperature inside the breast is 155 and tight 160.
8. Rest 20 min, carve, serve with fruits and herbs.

🎃Spicy Butternut squash soup with coconut milk and apple brie grilled cheese 🍎
Ingredients:
* 1 medium-sized butternut squash or any squash of your choice.
* 1/2 can of full-fat coconut milk
* 2 shallots
* 1 garlic head
* 2 Thai chili peppers(optional, depends on your heat preferences)
* 1 tsp fresh ginger, grated
* 1 1/2 cup of vegetable broth or chicken broth( or more, depends on desired thickness)
* Olive oil to drizzle vegetables
* 2 tsp turmeric powder
* 2 tsp paprika
* Salt and pepper to taste
* Fresh cilantro or parsley, for garnish
* For grilled cheese (2 slices of sourdough, 2 sage leaves, thin apple slices, butter)
Instructions:
1. Preheat oven to 380F
2. Prepare all listed vegetables and place on the baking dish.
3. Add seasonings and olive oil
4. Bake for 45 min, until vegetables are golden and soft inside.
5. Place everything in a pot , add coconut milk and broth. And blend with blender.
6. Adjust seasonings to taste, garnish and serve with apple brie grilled cheese.
7. For grilled cheese:
* Slice sourdough, sage, brie and apple slices.
* Assemble, add butter and melt on the griddle or pan until golden brown and cheese melted.
* Serve and enjoy!

CRUST
1/2 box 365 by Whole Foods Market Chocolate Candy Cane Sandwich Cremes
3 tbsp unsalted butter, melted
Ground the cookies in a food processor and then mix in melted butter. Press into the bottom of a lined springform pan and chill.
FILLING
16 oz cream cheese, room temp
8 oz mascarpone, room temp
1 ½ cups powdered sugar
¼ cup strong brewed 365 by Whole Foods Market Peppermint Mocha Coffee
1/4 tsp kosher salt
1 tsp vanilla extract
½ tsp peppermint extract
12 oz bag 365 by Whole Foods Market Dark Chocolate Chunks, melted
1 cup cold heavy cream (plus another 1 ½ cups for topping)
1/2 box 365 by Whole Foods Market Chocolate Candy Cane Sandwich Cremes, chopped
Mix together the cream cheese, mascarpone, and powdered sugar. Then mix in the coffee, salt, vanilla, and peppermint extract.
Melt the chocolate in the microwave in 30 second intervals and then mix into the batter.
With an electric mixer, whip the heavy cream until light and fluffy. Fold into the cheesecake batter.
Then fold in the chopped cookies.
Spread over the crust, cover, and chill overnight.
The next day, whip up another 1 ½ cups of heavy cream and top the cheesecake with the whipped cream, some chocolate shavings, and crushed candy canes. Enjoy! #365bywholefoodsmarket

Ingredients:
• 2 Cups whole milk (warm)
• 1/2 Cup sugar
• 1/2 Cup unsalted butter (melted)
• 1 packet (2 1/4 tsp) Active, dry yeast
• 5 Cups all-purpose flour
• 1 tsp baking powder
• 2 tsp salt
• 2 Tbsp unsalted butter (melted)
Filling:
• 3/4 Cup Salted Butter (softened)
• 3/4 Cup light brown sugar
• 2 Tbsp cinnamon
Icing:
• 4 oz cream cheese (softened)
• 2 Tbsp Salted Butter (softened)
• 2 Tbsp whole milk
• 1 tsp vanilla extract
• 1 cup powdered sugar
Instructions:
1. In a large bowl, mix the warm milk, sugar, and melted butter. Ensure it’s warm (100-110°F). Add yeast, mix slightly, and let it sit for 5 minutes till it froths.
2. Incorporate 4 cups of flour and mix until the dough forms. Cover and let it rise in a warm spot for 1 hour or until it doubles in size.
3. Butter two round cake pans.
4. Uncover the dough. Mix in baking powder, salt, and the remaining ¾ cup flour. Place the dough on a floured surface and knead till it’s not sticky. Add more flour if needed.
5. Shape the dough into a large rectangle, about ½ inch thick, ensuring even corners.
6. Spread the softened butter over the dough, then sprinkle brown sugar and cinnamon. Press this mix lightly into the butter.
7. Roll the dough to create a log and seal the seam. Slice into 14 equal sections, each about 1 ½ inch thick.
8. Shape with thread as shown on the video.Place 7 rolls in each cake pan. Cover and let them rise for another 30 minutes in a warm place.
9. Preheat the oven to 350°F.
For the icing:
10. In a bowl, whip together the cream cheese and butter. Mix in powdered sugar and vanilla, then add milk until the icing is smooth. Adjust the milk for desired consistency.
Baking:
11. Uncover the rolls, brush them with melted butter, and bake for 25-30 minutes until they’re golden brown.
12. Once baked, drizzle the icing over the rolls. Serve and savor!

Ingredients:
1. 2 boneless, skinless chicken breasts
2. Salt and pepper to taste
3. For chicken coating : 1/2 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp granulated garlic.
5. 1 egg
6. 1 tablespoon milk or water
7. 1/2 cup buffalo hot sauce
8. 4 tablespoons unsalted butter, melted
9. 2 sturdy sandwich rolls, ciabatta or your favorite bread.
10. 1 cup Coleslaw
11. Pickles
12. Ranch dressing
13. 2 slices Aged Gouda and 2 slices Pepper Jack cheese.
Instructions:
1. Prep Chicken: Flatten the chicken breasts using a mallet or rolling pin until they’re about 1/2-inch thick. Season both sides with salt and pepper.
2. Dredging Station: In one shallow dish, combine flour and cornstarch. In a second shallow dish, whisk together the egg and milk (or water) and breadcrumbs in a third.
3. Dip and Fry: Dip each chicken breast first into the egg mixture, ensuring it’s fully coated, then into the flour mixture, pressing it onto the chicken to adhere. Repeat egg and dip into breadcrumbs. Fry the chicken in a skillet with oil over medium heat until golden brown and cooked through, about 4-5 minutes on each side.
4. Buffalo Sauce: While the chicken is frying, combine the buffalo hot sauce and melted butter in a bowl. Stir until well combined.
5. Coat the Chicken: Once the chicken is cooked, immediately dip each piece into the buffalo sauce mixture, ensuring it’s fully coated.
6. Assemble Sandwich: Top toasted bread with ranch , pickles, chicken, cheese(melted with torch), coleslaw.
Then top with the other half of the bun.

Ingredients:
For sandwich:
1. Steak (Ribeye, Sirloin or yours favourite one)
2. Fresh herbs (thyme, rosemary)
3. Fresh garlic
4. Smoky Salt, pepper.
5. Multigrain Bread, Ciabatta or Sourdough (any type will work 👌🏻)
6. 2-3 slices Raclette cheese.
7. Fresh arugula
For mushroom sauce:
1. 2 cups of Bella (Baby Bella or Cremini) mushrooms, sliced.
2. 3 medium-sized shallots, thinly sliced
3. 1 cup heavy cream
4. 2 tbsp Worcestershire sauce
5. 1/2 cup red wine
6. 2 tbsp all purpose flour
7. 2 tablespoons unsalted butter
8. Salt and pepper, to taste
9. Fresh herbs like parsley or thyme.
Instructions:
For Mushroom Sauce:
1. Prep: Wash/slice mushrooms and shallots.
2. Sauté shallots in oil/butter until translucent (2-3 min).
3. Add mushrooms, salt, and pepper. Cook until browned (5-7 min). Stir in 2 tbsp flour.
4. Add red wine, scraping pan. Reduce by half (3-4 min). Add 2 tbsp Worcestershire.
5. Stir in cream. Simmer until thickened (3-4 min). Thin with wine/broth if needed.
6. Adjust seasoning, then remove from heat.
For Sandwich:
1. Let steak sit at room temp (20-30 min). Season both sides.
2. Cook steak in oil, butter, herbs, garlic (3-5 min/side). Rest a few minutes.
3. Slice steak against grain.
4. Toast buttered multigrain bread.
5. Assemble sandwich, melt cheese. Enjoy!

1. Boil a large pot of salted water. Once boiling, add the dried pasta and cook for one minute less than the al dente recommendation on the package. Drain and lightly coat with olive oil to prevent sticking.
2. While waiting for the water to boil, grate the cheeses and divide them into three portions: 3 cups for the sauce, 1 1/2 cups for the middle layer, and 1 1/2 cups for the topping.
3. In a large saucepan over medium heat, melt the butter. Sprinkle in the flour and whisk until the mixture resembles wet sand. Cook for about a minute, whisking frequently. Gradually pour in approximately 2 cups of half and half, whisking constantly until smooth. Add the remaining half and half and whole milk while continuing to whisk until the mixture is smooth.
4. Keep heating the mixture over medium heat, whisking regularly, until it thickens to a consistency similar to slightly thinned condensed soup.
5. Remove from heat and stir in the spices and 1 1/2 cups of cheese, ensuring they melt and blend in. Add another 1 1/2 cups of cheese and stir until fully melted and smooth.
6. In a large mixing bowl, combine the drained pasta with the cheese sauce, thoroughly mixing them together.
7. Prepare individual mini cocottes by placing 1 tablespoon of shredded cheese at the bottom. Pour the pasta mixture into the cocottes and layer with pancetta in the middle. Top with cheese.
8. Broil for 5 minutes or until the cheese becomes bubbly and lightly golden brown. Be cautious not to overcook.
9. Remove from the oven and enjoy immediately

Vegetable Salad you can make in advance and it’s even better on the next day!
Ingredients:
1/2 medium cabbage
3 medium cucumbers
2 bell peppers
1/2 red onion
1 daikon
3 carrots
a bunch of scallions
3 garlic cloves
1 tsp coriander
1 tsp paprika
salt
pepper
1 tbsp sugar
1/2 cup boiling avocado oil
2 tbsp red wine vinegar
3 tbs white vinegar
Instructions:
1. Wash, slice and julienne all vegetables.
2. Chop the garlic and set aside.
3. Add seasonings and garlic in the middle of the bowl.
4. Heat avocado oil and pour on garlic.
5. Add vinegar and adjust salt to taste.
6. Let it stay for 20 min and its ready to serve! Cover the rest of the salad, let it stay in a fridge and enjoy on the next day!
