Adjusting to being a full time family has been a wonderful joy in my life with God showing me the many blessings in every day. We are all getting into a steady routine. Today I’m sharing what we ate this week as well as a delicious Dutch Baby Pancake recipe that is both gluten free and dairy free. Dutch Baby Pancake Recipe 1/2 cup all-purpose flour or 1 to 1 GF flour 1/2 cup whole or 2% milk or Almond milk 2 large eggs 2 tablespoons granulated sugar 1 teaspoon vanilla extract 1/2 teaspoon kosher salt 1 teaspoon cinnamon 2 tablespoons unsalted butter or Coconut Oil Powdered sugar, maple syrup, and jam, for serving Preheat oven to 425’f and place in an 8-10 inch cast iron pan to preheat. Blend all ingredients in a high speed blender on high for 30 seconds. Allow batter to rest for 20 minutes. Take out your hot pan and add 2 tablespoons fat. Pour in your batter and place in the oven to bake for 15-20 minutes. Mine cooked in 15 minutes. Too with your favorite toppings and enjoy! Meal Prep for a Picnic Potluck *Summer Recipes* Lilac Lemonade and More!! Let make some new summer recipes! Einkorn Pancakes, Lilac lemonade, hummus, veggie dip, and more! Sharing what we had for breakfast and lunch then meal prep for a picnic! Thanks for joining me today! Lilac lemonade 4 bunches of lilac flowers 1.5 Cups fresh lemon juice or 1/2C bottled lemon juice 1 Cup Sugar 8 Cups of water Rinse lilac flowers and place in a 1/2 gallon glass jar. Fill with water 8 cups water. Allow to sit for 2 hours to overnight. I did overnight. Strain water through a fine mesh strainer into another glass jar. Make a simple syrup with sugar and 1-2 cups boiling water. Add all the ingredients and top with ice. Enjoy!! In this video I doubled the recipe. Today we are making a lot of super healthy meals for my big family. I hope you feel inspired and try a few of these nourishing foods. Lentil Porridge Recipe: 1 cup red lentils 1 cup rolled oats 3 cups water 1 can coconut cream (Or 4 cups milk of choice sub for liquid) 6-10 dayes pitted and chooped 1 banana sliced 1 tsp real salt 2 teaspoons cinnamon 1/4 cup maple syrup 1 sweet potato cubed optional sliced apple raisins, craisins or dried fruits of your liking. Simmer ingredients 20 minutes and top with shredded coconut and fruit of choice. Enjoy! We got a Costco membership and stocked up on food for our pantry!
