Baking with LaLa – Valentines Day Oreo Truffles
Hi there! I’m Lala. I’m a Catholic, Wife and Mother to my toddler daughter. I love to cook and try out new recipes. Today, in honor of Valentines Day, we'll be making some delicious Oreo Truffles! During the livestream, I’ll walk you through each step of the cooking process. Please feel free to ask questions in chat or a comment after the livestream has ended!
Ingredients:
36 oreos (family size)
8 ounces of cream cheese
12 ounces of chocolate bark
Begin by crushing the Oreos. You can do this either by using a food processor or blender on low speed until they're crumbled, or by placing them in a large Ziploc bag, sealing it, and rolling over them with a rolling pin until they turn into fine crumbs. Remember to set aside 2 tablespoons of these crumbs for later use.
Next, add the cream cheese to the crushed Oreos and mix them together until well combined. You can do this using the food processor or blender on low speed.
Once the mixture is ready, use a small cookie scoop to portion out about a tablespoon of it, then roll it between your hands to form small balls. Place these balls on a large baking sheet lined with parchment paper or a silicone baking mat.
Transfer the baking sheet to the refrigerator and let the cookie balls chill for at least 30 minutes to firm up.
While the balls are chilling, melt the white chocolate. You can do this either in a double boiler by placing the chocolate in a heatproof bowl set over a pot of simmering water, or in the microwave by heating it in 30-second intervals, stirring between each interval until smooth.
Once the chocolate is melted and the balls are chilled, dip each ball into the melted white chocolate, ensuring it's fully coated. Use a fork to lift the coated ball out of the chocolate, allowing any excess to drip off, and then place it back onto the lined baking sheet.
Immediately sprinkle the reserved crushed Oreos on top of each coated ball before the chocolate sets.
Return the baking sheet to the refrigerator and let the truffles chill for another 30 minutes to 1 hour, or until the chocolate coating has set.
Notes:
Make sure to store the finished truffles in an airtight container in the refrigerator until ready to serve.
You can customize these truffles by using different flavors of Oreos or coating them with dark or milk chocolate instead of white chocolate, if desired.

Here is the Recipe:
Ingredients (makes 24 muffins)
For the filling:
8 ounces cream cheese, softened
1 cup powdered sugar
For the Muffins:
3 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
1 tablespoon plus 1 teaspoon pumpkin pie spice
1 teaspoon salt
1 teaspoon baking soda
4 large eggs
2 cups sugar
15 ounces pumpkin puree
1 ¼ cups vegetable oil
Instructions:
Filling:
To prepare the filling, combine the cream cheese and powdered sugar in a medium bowl and mix well until blended and smooth. Transfer to the freezer while preparing the rest of the batter. We just want the mixture to firm up. If you are making these in steps and have a long time before you're assembling, just chill the mixture in the fridge so it doesn't freeze all the way.
Muffins:
1. To make the muffins, preheat the oven to 350 degrees F. Line muffin pans with paper liners. In a medium bowl, combine the flour, cinnamon, nutmeg, cloves, pumpkin pie spice, salt and baking soda; whisk to blend. In the bowl of an electric mixer combine the eggs, sugar, pumpkin puree and oil. Mix on medium-low speed until blended. With the mixer on low speed, add in the dry ingredients, mixing just until incorporated.
2. To make the topping, combine the sugar, flour and cinnamon in a small bowl; whisk to blend. Add in the butter pieces and cut into the dry ingredients with a pastry blender or two forks until the mixture is coarse and crumbly. I always get inpatient here and mix it together with my hands so that it looks like the texture of wet sand. I know you aren't supposed to do it this way but I'm impatient. Transfer to the refrigerator to chill until ready to use.
3.To assemble the muffins, fill each muffin well with a small amount of batter, just enough to cover the bottom of the liner (1-2 tablespoons). Place a scoop of the cream cheese mixture into each muffin well. I use my smallest cookie scooper. You want to put the cream cheese lower than you think because it will rise a lot during the baking process. Divide the remaining batter among the muffin cups, placing on top of the cream cheese to cover completely. Sprinkle a small amount of the topping mixture over each of the muffin wells.
4. Bake for 20-25 minutes. Transfer to a wire rack and let cool completely before serving. I like them warm, cold, and room temperature.

Cheesy Mexican Street Corn Hash with Smoky Red Pepper Crema
Ingredients (for two servings, half or double depending on the number of servings you’d like!)
Potatoes – 12 ounces
Garlic – 2 cloves
Sweet Corn – 15 ounces / 1 can
1 – Long Green Pepper
1 – Lime
1 – Red Onion
Cilantro
2 ounces Mozzarella Cheese
Tex Mex Paste – 1 ounce
2 ounces Smoky Red Pepper Crema
2 ounces Mozzarella Cheese
Smoked Paprika
Salt, Pepper
4 Tablespoons Mayonnaise
1 Tablespoon Cooking Oil
1. Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce. Dice potatoes into ½-inch pieces. Toss on a baking sheet with a drizzle of oil, paprika, salt, and pepper. Roast until browned and tender, 20-25 minutes.
2. While potatoes roast, drain corn. Peel and finely chop garlic. Zest and quarter lime. Halve, deseed, and dice green pepper into ½-inch pieces. Halve, peel, and dice onion into ½-inch pieces. Roughly chop cilantro.
3. Heat a medium dry ovenproof pan over medium-high heat (use a large pan for 4 servings). Add corn in a single layer; cook, undisturbed, until corn begins to char, 2-3 minutes. Add garlic, a drizzle of oil, and a pinch of salt; cook, stirring occasionally, until heated through and charred in spots, 2-3 minutes more. (Corn may start popping—that’s OK! Cover, keeping lid slightly ajar for steam to escape and to keep corn in the pan). Turn off heat; transfer to a plate. Wipe out pan.
4. While corn cooks, combine 2 TBSP mayonnaise (4 TBSP for 4 servings), a squeeze of lime juice, and a pinch of lime zest in a small bowl. Add water a splash at a time until mixture reaches a drizzling consistency.
5. Heat a drizzle of oil in pan used for corn over medium-high heat. Add green pepper and onion; season with salt and pepper. Cook, stirring occasionally, until browned and tender, 4-5 minutes. Turn off heat. Once potatoes are done, add roasted potatoes, charred corn, and Tex-Mex paste to pan; toss to combine.
6. Sprinkle hash with cheese. Bake on middle rack until cheese melts, 2-3 minutes. Drizzle hash with crema and lime mayo; sprinkle with cilantro. Serve family style, directly from the skillet, with remaining lime wedges.

Creamy Coconut Chickpea Curry over Garlic Basmati Rice
Ingredients (for two servings, half or double depending on the number of servings you’d like!)
-14 ounces Chickpeas
-½ Cup Dry Basmati Rice
-1.5 ounces Tomato Paste
-6 Ounces Coconut Milk
-1 Tablespoon Curry Powder
-1 Teaspoon paprika
-2 Cloves Garlic
-1 Onion
-1 Tomato
-Cilantro
-1 Tablespoon Butter
-Olive Oil, Salt and Pepper for cooking and to taste
Cook this recipe in 5 simple steps!
1. Wash and dry produce. Peel and finely chop garlic. Halve, peel, and finely chop half the onion (whole onion for 4 servings). Drain and rinse chickpeas. Dice tomato. Roughly chop cilantro.
2. Heat a drizzle of oil in a small pot over medium-high heat. Add half the garlic; cook, stirring, until fragrant, 30 seconds. Stir in rice, ¾ cup water (1½ cups for 4 servings), and a big pinch of salt. Bring to a boil, then cover and reduce heat to low. Cook until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
3. While rice cooks, heat a drizzle of oil in a large pan over medium-high heat. Add chopped onion and a pinch of salt; cook, stirring occasionally, until browned and softened, 4-5 minutes. Add tomato paste, curry powder, paprika, and remaining garlic. Cook, stirring frequently, until fragrant, 1 minute.
4. Stir chickpeas, diced tomato, coconut milk, 1 tsp sugar, ¼ cup water, and a big pinch of salt into pan. (For 4 servings, use 2 tsp sugar and ⅓ cup water.) Bring to a simmer, then reduce heat to medium. Cook until thickened, 5-7 minutes. Stir in sour cream and 1 TBSP butter (2 TBSP for 4) until melted and combined. (If mixture is too thick, add another splash of water.) Taste and season generously with salt and pepper.

5. Fluff rice with a fork; season with salt and pepper. Divide rice between bowls and top with chickpea curry. Sprinkle with cilantro. If you like things spicy, thinly slice chili and top with as much as you like.

Cook this recipe in 6 simple steps!
Ingredients Needed:
8 ounces dices steak
12 ounces potatoes
1 onion
2 cloves garlic
2 baguettes
2 slices gouda cheese
1 beef stock concentrate
2 tbsp butter
2 tbsp mayonnaise
Salt and Pepper
Step # 1 - Adjust racks to top and middle positions and preheat oven to 425 degrees. Wash and dry produce. Cut potatoes into ½-inch-thick wedges. Peel garlic. Halve, peel, and thinly slice onion. Toss potatoes on a baking sheet with a large drizzle of oil, salt, and pepper. Place garlic cloves in the center of a small piece of foil; drizzle with oil, season with salt and pepper, and cinch into a packet. Add garlic foil packet to same sheet. Roast on top rack until potatoes and garlic are tender and golden brown, 20-25 minutes.
Step # 2 - Meanwhile, heat a drizzle of oil in a large pan over medium-high heat. Add onion and a pinch of salt and pepper. Cook, stirring, until softened and lightly browned, 8-10 minutes. Add 1 tsp sugar and ¼ cup water (2 tsp sugar and ⅓ cup water for 4 servings). Cook, stirring, until onion is caramelized and jammy, 2-3 minutes more. Turn off heat; stir in 1 TBSP butter (2 TBSP for 4) until melted. Transfer to a small bowl. Wipe out pan.
Step # 3 - Once garlic is done, carefully transfer to a cutting board; mash cloves with a fork. In a second small bowl, combine mashed garlic with 2 TBSP mayonnaise (4 TBSP for 4 servings); season with salt and pepper. Place 2 TBSP butter (4 TBSP for 4) in a third small microwave-safe bowl. Microwave until melted, 30 seconds.
Step # 4 - Slice baguettes lengthwise, stopping before you get all the way through (they should look like hot dog buns when you’re done). Brush cut sides with melted butter and season with salt and pepper. Place, cut sides up, on a second baking sheet. Toast on middle rack until golden, 2-3 minutes.
Step # 5 - Pat diced steak dry with paper towels; season with salt and pepper. Heat a drizzle of oil in pan used for onion over high heat. Add steak and cook, stirring occasionally, until browned and cooked to desired doneness, 2-3 minutes. Reduce heat to medium, then add caramelized onion and 1 TBSP flour (2 TBSP for 4 servings). Cook until flour is lightly browned, 1-2 minutes. Stir in stock concentrate and ¼ cup water (⅓ cup for 4). Cook until slightly thickened, 1-2 minutes more.
Step # 6 - Spread one cut side of each baguette with roasted garlic aioli. Top one cut side with steak and onion mixture, then cover with cheese. Return to oven until cheese melts, 2-3 minutes. Carefully close sandos and divide between plates along with potato wedges. If you’ve got some on hand, serve with ketchup on the side for dipping.
Steak is fully cooked when internal temperature reaches 145°.

Zesty Pasta Salad

This week, we'll be making a delicious pasta salad! Enjoy this flavorful pasta salad as a satisfying main dish or a delightful side throughout the week. For the freshest taste, keep the dressing separate until serving, and the pasta will remain fresh for four days!
Ingredients:
For the pasta:
Pasta of Choice [one package, 16 oz]
Toppings:
Proteins: Montery Jack, Pepper jack, Cheddar, Parmesan and Feta Cheese, Pepperoni
Vegetables: Cucumbers, Grape Tomatoes, Bell Pepper, Olives
Instructions:
1. Cook the pasta according to the instructions on the package. Once cooked, drain and rinse under cool water. Allow it to continue draining while you chop the cheeses and vegetables for the pasta.
2. Cut your choice of proteins into desired sizes. Feel free to use any cheese, pepperoni, or salami you have available.
3. Cut all your preferred vegetables into bite-sized pieces.

Salad Dressing: You have the option to use your favorite Italian or Greek dressing or make your own. I recommend making your own for a truly delightful experience. Feel free to adjust the seasoning according to your taste preferences. It may take some trial and error, but when you find the perfect balance, it becomes a delicious blend of spicy and sweet.
Ingredients:
½ cup Olive Oil
1/4 cup Red Wine Vinegar, or White Wine Vinegar
1-2 tablespoons sugar (start at one)
½ to 1 teaspoon garlic, basil, oregano, onion powder
¼ teaspoon red pepper flakes
¾ teaspoon salt, ¾ teaspoon pepper
½ teaspoon lemon juice
Directions:
1. In a bowl, mix the olive oil and your choice of vinegar.
2. Add the different spices and sugar to the mixture. Continuously mix and taste, adjusting the spices to your liking.
3. When the dressing is almost fully mixed, incorporate some parmesan cheese to bring all the flavors together.
