-Butternut Squash Risotto
(Roasted Butternut Squash)
2.5 cups cubed butternut squash
1 T olive oil
S/P
- Toss butternut squash in EVOO and S/P. Roast in 400 degree oven for 25-30 min until nice and golden brown.
(Risotto)
1/2 C White Wine
2 C Arborio Rice
1 t minced garlic
4 C broth (heated)
2 T butter
1 C Parmesan Cheese (fresh and grated)
-Turn heat on Medium high, add butter and heat. Add rice and toast for about 1 min. Add garlic and cook for about 1 min. Add white wine and simmer until mostly cooked out. Add 3/4 C broth. Bring to light boil and let it cook down. Repeat the broth step as many times as necessary until rice is cooked al dente. Turn heat to low and add cheese and mix in. Add butternut squash, do not overmix, toss in. Serve with extra parmesan on top.

BREAKFAST ready in 2 MINUTES EACH MORNING | Quick & EASY Breakfast Ideas
Welcome to Feeding the Byrds!
DO NOT SKIP on the best meal of the day! We absolutely love and cherish breakfast around here, and it doesn't have to be a pain, you don't have to spend all morning in the kitchen. Just 2 minutes each morning and you can have a delicious breakfast prepped and ready, getting you started off on your best day. These quick & easy breakfast ideas are perfect for you!
What's included in these quick & easy breakfast ideas:
Breakfast Burritos: See below
Bacon Lattice Quiche: See below

Breakfast Burritos (we like to make double of this)
6 medium flour tortillas
2 Tbsp unsalted butter
6 large eggs
1/2 cup sour cream, divided (2 Tbsp for eggs & 1 Tbsp per tortilla)
1/4 tsp sea salt , (or to taste)
6 oz Sausage, ground
4 oz cheese,
1 Tbsp butter , to sautee
Breakfast Burrito Filling:
-In a medium bowl, whisk together 6 eggs with 2 Tbsp sour cream, and salt and pepper to taste.
-Heat a large skillet over medium heat and sautee sausage. Add additional topping ingredients. Remove from pan.
-In a pot or skillet over medium heat, melt 1 Tbsp of butter, add egg mixture and stir/scramble until the eggs are 75% cooked. While cooking, remove from the heat, and put back on the heat every minute or so. Also add in salt and 2 tbsp of sour cream. Stir constantly.
-Combine eggs with sausage.
Assemble:
-Spread 1 Tbsp sour cream in the center of a tortilla and top with 1/6 of the cooked eggs, shredded cheese, and toppings.
-Tightly roll the burrito and wrap each one in parchment paper. Place into a freezer safe bag and freeze.
To reheat:
-1 min in microwave.
-Add tbsp of butter to pan, and sautee burrito on all sides. Serve hot!
Bacon Lattice Quiche
-10 strips bacon
-20 ounces frozen hash browns thawed
-½ cup white cheddar shredded
-½ teaspoon salt
-¼ teaspoon pepper
-7-8 eggs beaten
½ cup heavy cream or whole milk
-1 cup white cheddar cheese shredded
-1 tbsp chives sliced or parsley
-salt and pepper to taste
-Create a lattice with bacon on parchment lined baking sheet. Cook on 425 for about 10-13 minutes.
-Combine potatoes, 1/2 cup cheese and s/p in a bowl.
-Lightly grease a pie dish and evenly press the hash browns mixture into the bottom and sides of the pan.
-Place the pie dish into the oven at 425 for 15 minutes.
-In a large mixing bowl whisk together eggs and cream. Cheese and Chives.
-Pour the egg mixture into the hashbrown base and place the bacon lattice on the top, just gently pushing into the egg mixture (it doesn't need to be submerged).
-Bake at 375 for 30-40 minutes until eggs are cooked.

Stuffed Pepper Casserole
- 3 bell peppers chopped/diced to desired size
-1 TBSP evoo
-S/p
-1lb ground beef
-2 cups cooked rice
-1 can diced tomatoes (drained)
-1 tsp paprika
-1 tsp chili powder
-1/2 tsp onion powder
-1 tsp salt
-1 cup marinara or sauce
-1 cup cheese of choice
Preheat oven to 350.
Add peppers to an 8 inch baking dish and drizzle with EVOO and toss in salt and pepper.
Mix ground beef, rice, tomatoes, paprika, chili powder, salt and onion powder. Spread over the peppers.
Top with your favorite marinara sauce and some cheese.
Bake 30 min covered and then another 10 uncovered.

Well I'm here to tell you that there are SO MANY crock pot recipes that don't need canned cream of soups. Don't miss these. These are some of the easiest recipes without canned soup. So delicious, easy to make, healthy options for dinner!

White Chicken Chili (https://bit.ly/3Zf0x4a)
Sweet and Sour Meatballs:
-3/4 cup Brown Sugar
-3 TBSP Corn Starch
-¼ cup Vinegar
-3 TBSP Soy Sauce or coconut aminos
-1 Package of Frozen Meatballs
Directions:
Put all ingredients in freezer bag and place in the freezer. Place into the crockpot and cook on low for 6-8.
BBQ Baked Beans
- 6 pieces Bacon cooked and crumbled
- 2 cans great northern beans drained and rinsed
- 1 cup brown sugar
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 3TBSP Ketchup
- 1 TBSP stone ground mustard
- 3 TBSP maple syrup
- 1 TBSP vinegar (white or ACV)
- 1 TBSP bacon grease
Combine all in a crock pot and cook on low for 6-8 hours or high 3-4.

I asked for your favorite soups and you did not disappoint. These were all so delicious. I received several more from you guys, let me know if you are interested in seeing more. These are absolutely some of the best soups for this cold season. I love soup on a chilly day.
What's included in this Favorite Soups video:
Tortellini Soup (Recipe Below)
Susan's Ground Beef and Barley (recipe below)

Tortellini Soup:
1 lb Italian Sausage
1 diced yellow onion
2 peeled and thinly sliced carrots
2 minced garlic cloves
1 TBSP Italian seasoning
2 TBSP flour
6 Cups Chicken Broth
1 Pk Cheese Tortellini
1 cup Cream
6 cups baby spinach
s/p to taste
*Cook sausage over medium heat. Add onion and carrots and cook until soft. Add garlic and Italian Seasoning and cook 1 min.
Add flour and cook 30 seconds.
Add broth and bring to a boil.
Add tortellini and cream and cook until al dente. Add in spinach and let wilt. Season with S/P as needed. Serve with crusty bread.
Susan's Beef and Barley Soup:
1½ lbs lean ground beef
1 small white onion, diced
3 stalks celery, diced small
1 large carrot, diced small
4 cloves garlic, finely diced or crushed
2 boxes beef stock
1 28 oz crushed tomatoes
2 bay leaves
1 cup Quick Cooking Barley
Salt and pepper to taste
Crushed red pepper flakes if desired
1. Brown ground beef in large pot. Salt and pepper beef. Drain.
2. Add onion, celery, carrot, garlic to the hot beef in the pan and cook for 5 minutes on medium
low heat, to soften vegetables.
3. Add 2 boxes beef stock, entire can of crushed tomatoes and bay leaves. Add red pepper flakes if
desired.
4. Bring to a boil, reduce heat, cover, simmer for 10 minutes on low.
5. Add barley. Continue to simmer soup for 12 minutes.
6. Taste for seasoning and adjust.
7. Remove bay leaves and discard.
8. Soup/stew is ready. Enjoy!

12 QUICK AND EASY HOLIDAY TREATS | STRESS FREE CHRISTMAS TREATS | LAST MINUTE TREATS

If you need some last minute Christmas treats for Christmas week, these are so quick and easy and you can use them for any kind of gathering! We love quick an easy holiday treats over here, ones that we can easily put together when we need something last minute. Merry Christmas!
What's included in these quick and easy Holiday Treats Video:
Christmas Crack
-35-40 saltine crackers
-1 cup butter
-1 cup brown sugar
-2 cups semi-sweet chocolate chips
-1/2 cup chopped pecans (optional)
Preheat oven to 400 degrees. Line a 10×15 inch baking sheet with aluminum foil and spray with cooking spray.
Place your saltine crackers in even rows.
In a saucepan over medium high heat melt the butter and brown sugar and whisk and let it boil for a few minutes.
Pour. over the. saltines and spread out and bake in the oven for 5 minutes. Remove from the oven and sprinkle with chocolate chips and let it sit.
Spread the chocolate over the Saltines and sprinkle with chopped pecans and let it harden. Cut into pieces and serve
Dipped Crackers
-48 ritz crackers
-3/4 cup creamy peanut butter
-16 ounces semi-sweet chocolate or white chocolate chips
Make peanut butter sandwiches with crackers. Melt the chocolate in a microwave safe bowl. Dip each cracker in the chocolate and place on parchment paper to let them harden.
Buckeyes
-1 cup peanut butter
-1 stick butter softened
-1/4 teaspoon almond extract (or vanilla)
-2 cups confectioners' sugar
-2 cups semisweet chocolate chips or chocolate bark melted
In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. Roll into 1 inch balls and place on a waxed paper.
Press a toothpick into the top of each ball and dip into melted chocolate.
Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Refrigerate until serving.

Melt chocolate and pour peanuts into the melted chocolate. Take spoonfuls and place onto a parchment lined baking sheet and allow them to harden.

YOUR FAVORITE HOLIDAY APPETIZERS | HOLIDAY APPETIZER RECIPES YOU WILL LOVE
Welcome to Feeding the Byrds!
You guys sent me your favorite Holiday Appetizers and we got to try them! I love all of these ideas and we had so much fun trying your recipes.
Corn Dip:
-15 oz. corn can, drained
-4 oz. green chilies can, diced
-1/4 cup onions diced
-2 oz. cream cheese softened
-1/4 cup sour cream
-1/2 teaspoon garlic powder
-1/2 cup shredded mozzarella cheese
-1/2 cup shredded pepper jack cheese
-crackers or tortilla chips for serving
Preheat oven to 350 and grease a small casserole dish with nonstick cooking spray. Set aside.
In a small bowl, add drained can of corn, diced green chilies, diced onions, softened cream cheese, sour cream and garlic powder. Mix well until combined.
Stir in shredded mozzarella cheese, and 1/4 cup shredded pepper jack cheese.
Spread corn mixture into prepared pan and top with remaining 1/4 cup pepper jack cheese.
Bake dip for 20 minutes until bubbly on top..
Broil for an 2-3 minutes to crisp and brown the cheese on top. Be careful not to walk away as a broiler moves quickly and easily burns when unattended.
Serve corn dip hot with crackers.
Pamela's Sausage Stars:
-2 cups cooked sausage
-1 1/2c grated sharp cheddar cheese
-1 1/2 c grated Monterey Jack cheese
-1c. prepared hidden valley dressing
-1 2.25 oz can of sliced ripe olives (I use black)
-1/2 cup chopped red peppers
-1 pkg won ton wrappers
-olive oil
Preheat oven at 350
Blot sausage dry with paper towels and combine with cheese dressing olives and red peppers.
Lightly grease a muffin tin and press 1 wrapper into each cup, brush with oil. Bake for 5 min empty until begin to get a golden brown. Remove from oven fill with mixture and bake 5 more min or until it bubbles.
Makes 4 to 5 dozen.
(This mixture works great with Crab or Chicken too.)
Bacon Wrapped Breadsticks
-3/4 cup lightly packed brown sugar
-3 tablespoons chili powder
-1 package thin-sliced bacon (16 ounce size)
-1 package thin breadsticks/grossini(3 ounce size)
Preheat oven to 350F. In a pie plate, combine brown sugar and chili powder; set aside. Cut bacon in half lengthwise. Wrap 1 piece of bacon around each breadstick/grossini. Roll each breadstick in brown-sugar mixture. Place breadsticks in a single layer on a cooling rack. Place rack on a foil-lined 15 x 10 x 1-inch jelly-roll pan. Bake for 20 to 25 minutes.
Halloumi in blankets
-225 g halloumi (one block)
-6 rashers smoked streaky bacon or prosciutto
Slice your Halloumi longways and cut into fingers
Wrap each Halloumi stick with bacon or prosciutto
You can cook in the oven, 375F for 12 - 15 mins or you can Air Fry at 400F for 10 mins
Serve these with a sweet chilli dipping sauce

- 6 pieces Bacon cooked and crumbled
- 2 cans great northern beans drained and rinsed
- 1 cup brown sugar
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 3TBSP Ketchup
- 1 TBSP stone ground mustard
- 3 TBSP maple syrup
- 1 TBSP vinegar (white or ACV)
- 1 TBSP bacon grease
Combine all in a crock pot and cook on low for 6-8 hours or high 3-4.
Cheesy Corn:
- 1 bag white corn
- 4 oz cream cheese
- 2 pieces of white American cheese
Combine all in the crock pot and cook on low 6-8 hours stirring 2-3 times.

Scalloped Sweet Potatoes: see below
Butternut Squash Risotto:
-2 cups cubed butternut squash
-1 tbsp oil
-2 tbsp butter
-1 cup Arborio rice
-â…“ cup dry white wine
-2.5 cups hot chicken stock
-¼ cup grated Parmesan cheese
-salt and pepper
Preheat oven to 425. Mix butternut squash with oil, salt and pepper and toss to combine. Roast at 425 for about 20 min or until tender.
Add butter to a skillet and melt. Add in the rice and toast it, about 3-4 minutes until you start to see
some color. Reduce heat to a medium. Add in the wine and let it cook out. Add 1/4 cup of broth or stock and let it cook down, cooking the rice. Repeat this process until all of the rice is tender.
If the broth is used and rice is not fully cooked, repeat the process with water. Add in Parmesan cheese and roasted butternut squash and mix all together. Serve hot.
Brown butter carrots:
-Whole carrots
-1 tsp olive oil
-1 tsp oregano
-salt and pepper
-2 tbsp butter
-sage (optional)
Preheat oven to 400 degrees F. Combine carrots with EVOO, salt, pepper and oregano. Spread out onto a parchment lined baking sheet andbake for about 20 min.
Melt butter in skillet on medium heat (add in sage if you have it). Bubbles will start to form and you will see brown flecks. Once you see the flecks, you will remove from heat. Remove the sage and toss it. Pour your brown butter over the carrots and serve.
Broccoli Casserole:
-5 cups broccoli florets
-½ cup sour cream or greek yogurt
-½ cup mayonnaise
-1c can cream of mushroom soup
-1â…“ cups shredded sharp cheddar cheese
-1 tsp garlic powder
-1 tsp salt
-½ tsp pepper
-1/4 cup crushed Ritz crackers
-1/4 cup Cheese-its
-2 tbsp butter melted
Preheat the oven to 350 degrees F. Combine the broccoli, sour cream, mayo, cream of mushroom, garlic powder, salt, pepper, and 1 cup of the grated cheese in a bowl. Mix well. Put mixture into a greased 9x13 casserole dish and top with rest of the cheese.
Crush the ritz crackers and cheese-its and spread all over the top of the casserole. Drizzle with the melted butter. Bake the casserole uncovered for 30-35 minutes or until it is bubbly, the cracker crust is lightly browned, and the broccoli is fork-tender. Let sit for about 5 minutes and serve.
Smashed Potatoes:
-8 red potatoes
-2 tsp Olive oil
-salt to taste
-1 tsp garlic powder
-1/3 cup of parmesan cheese
Preheat oven to 425 degrees F. Wash and boil potatoes for about 20-25 min. Transfer to a parchment lined baking sheet and use your potato masher to smash them down to around
1/2 inch thick. Drizzle with EVOO and dust with salt and garlic powder. Sprinkle with parmesan cheese. Bake for 20-25 min until the edges are crispy.
Scalloped Sweet Potatoes:
-6 large sweet potatoes sliced
-1/4 cup maple syrup
-1/4 cup butter melted
-1/2 tsp rosemary
-1/4 tsp cayenne
-1/4 tsp salt and pepper
Preheat to 425 degrees F. Slice the sweet potatoes and arrange in a greased
casserole dish. Mix together the maple syrup, butter, rosemary, cayenne, salt and pepper and pour all over the stop of the potatoes. Cover with foil and bake 30 min. Remove the foil and place under the broiler for a couple of minutes.
