Who else loves this dish? 🍜💛 Tag your friends and share the love for Pancit Bihon! #FilipinoFood #ComfortFood #PancitBihon 8 oz Rice Noodles, They need to be made of rice 2 tsp Extra Virgin Olive Oil 10 oz Boneless Skinless Chicken Breast, sliced or diced (you can also use precooked or leftover chicken) 1 c Carrots, sliced 1 c bell peppers 1 c green beans 1 tsp garlic 1 tsp onion 2 cups Cabbage, shredded 3 cups Chicken Broth 2 Tbsp vinegar 2 Tbsp Soy sauce Salt and pepper to taste Chicken bouillon Optional Pork Shrimp Chicken liver In a wok or large skillet with higher sides, heat oil until nice and hot Place the chicken in and brown it on both sides until it’s no longer pink. Remove and set aside. Skip this step if using precooked chicken. In the still hot pan, add the vegetables and sauté for about 6 minutes until beginning to get soft but still firm. Stir everything together, then, remove everything from the pan. In the still hot pan (see a trend? Keep that pan nice and HOT!) add the chicken broth, vinegar, soy sauce and bouillon. Heat through. Add the dry noodles to the pan and let the liquid get absorbed. Add the veggies and chicken back in and mix everything together; Season with salt and pepper.

Warm Your Soul with a Bowl of Homemade Filipino Chicken Sopas 🍲 Cold weather calls for Filipino chicken sopas! My pantry-friendly version with just chicken turned out delish! Remember, make it your own with whatever you have on hand. Who's ready to try their own twist on this cozy comfort food? #PantrySopas #ComfortFood #MakeItYourOwn Ingredients 1 lb. chicken (skin removed) 2 ounces ham chopped (optional) 1/2 lb elbow macaroni (i used shell coz it's what I have) 4 stalks celery minced 1 medium onion (minced) 1 large carrot (diced) 1 ½ cups chopped cabbage (optional) 4 cups chicken broth 6 to 8 cups water 1 1/2 cup fresh milk or 1 14 oz. can evaporated milk 3 tablespoons butter Salt and pepper to taste Instructions Bring the water to a boil. Add the chicken. Boil the chicken in low to medium heat for 45 minutes or until tender. Remove the chicken and let cool. Set-aside the water used to boil the chicken. We'll use this later. Once the chicken reaches room temperature, shred the meat using your hands. Discard (throw away) the bones (if using chicken with bones) Meanwhile, heat a clean large cooking pot. Pour-in the butter and oil. Once the butter and oil becomes hot, sauté the onion, carrot, and celery for 3 minutes. Add the shredded chicken and chopped ham. Cook for 2 minutes. Pour-in the chicken broth and the remaining water used to boil the chicken. Stir and let boil. Simmer for 20 minutes. Add the elbow macaroni. Cook for 15 minutes. Add more water if needed. Pour-in the milk. Stir and let boil. Add salt and pepper to adjust the taste. Transfer to a serving bowl. Serve.
