Recipe: Mexican Chicken Fajitas
Fajita Spice Mixture:
2-1/2 Spoon ground cumin
2 ½ Spoon Chilli powder
1 Spoon Onion powder
1 Spoon Garlic powder
1 Spoon Smoked paprika
1 Spoon Salt
1 Spoon Red pepper flakes
Chicken Fajitas: 4 Boneless skinless chicken breasts
2 Spoon olive oil
Divided
3 Large bell pepper sliced
1 Medium red onion sliced
4 Cloves Garlic minced
1/4 Cup Lemon juice
12 Small flour tortillas to serve
Garnish:
sour cream
Coriander
Guacamole
Rajma
Salsa
Instructions
In a small bowl, whisk together the fajita seasoning ingredients.
Pat the chicken dry with a paper towel
Use half the seasoning to rub both sides of the chicken breasts. Reserve the other half.
Place a large cast-iron skillet over medium-high heat. Add 1 tablespoon of olive oil and once hot add the chicken and cook for 5 to 7 minutes. The chicken should be fully cooked with an internal temperature of 165 degrees F.
Remove the chicken breasts, place them on a cutting board, and cover with foil, let it rest.
Add the remaining 1 tablespoon of olive oil to the same pan, once hot add the chopped onion and bell pepper. Sauté for 5 minutes until soft-crisp, and add the remaining half of the spice mixture and minced garlic. Cook an additional 2-3 minutes.
Slice the chicken breast into long strips and add to the skillet, drizzle with lime juice and toss.
Serve hot hot hot hot. Top with sour cream, cilantro, guacamole or salsa.

Recipe: Instant Pot Hawaiian Chicken
Ingredients:
Chicken thighs - Use thighs because they result in tender and moist meat. However, you can easily use breasts or other parts as well.
Soy sauce – low sodium is the best option here.
Lime juice and zest - it adds a little citrusy note to it.
Orange juice - use any kind you have.
Sesame oil
Slices of pineapple
Simla Chili
Minced Garlic – Try using fresh minced garlic. Also, if you are not a fan of garlic, leave it out.
Ginger – As with garlic, go with fresh ginger. It makes a huge difference.
brown sugar and hoisin sauce
Red pepper flakes
Cornstarch – This is used to thicken sauces and make a slurry.
Green onions, sesame seeds and chopped almonds – for garnishing.
How to make Instant Pot Hawaiian Chicken?
Cut the ingredients into pieces. Cut the thighs, pineapple, red bell pepper, and yellow bell pepper into 1-inch pieces.
Make the instant pot mixture. Combine the ingredients in a pot in the following order: soy sauce, lime juice, orange extract, zest, sesame oil, garlic, ginger, sugar, and hoisin. Then, set the pot to high pressure. Make sure the lid is tightly closed, and leave for 5 minutes. Then leave and let it simmer on low pressure.
Make the sauce mixture. When the pot is left to simmer, stir in the cornstarch and orange juice, stopping only when no lumps appear. Pour it over the pot, stir, and saute again for at least 3 minutes.
Garnish and serve. Once the desired thickness of the sauce is achieved, prepare your rice or other choice of sides. Add chopped green onions and sesame seeds for extra flavor. Then, serve.

Fry while stirring constantly. Wait until the oil in the pan is hot, then add the steak strips in a single layer. Let it cook for about 1 minute without touching it. Then add the vegetables and stir-fry until deep brown. Follow the aromatics. Give the sauce a quick stir and then add to the stir-fry. Cook for a minute to thicken the sauce.
Serve. Sprinkle with sesame seeds and enjoy immediately over white rice.
