Known for his role as Kevin on The Office, Brian Baumgartner is serious when it comes to barbecue. One of Braumgartner's most famous moments on The Office was when he dropped the chili pot. The meme helped him launch his first cookbook, "Seriously Good Chili." Now Brian Baumgartner has a second book, "Seriously Good Barbeque." The book has over 100 recipes from all over the country. I took the time to make two of them for Tank Cooks, and then I went for a walk with Brian around Central Park, walking past commencement activities from FIT.

Walk Through the Stanley Cup's History With Frank The Tank | Episode 13 presented by ESPN
The Stanley Cup is the most prestigious, historic, and timeless trophy in team sports. For 130 years, hockey's best have competed for it; to touch it is to touch history. In 1893, Lord Stanley of Preston purchased it in a London Market for ten guineas ($48.67 USD), equivalent to $1,650 today; the Stanley Cup was originally called the Dominion Hockey Challenge Cup. Lord Stanley was Governor General in Canada, loved hockey and wanted a trophy to be given to the best teams who competed in a series of challenges with the winner keeping the cup, which was just the original bowl.
The challenge era ended in 1910, but teams from as far as the Yukon traveled great distances to compete for the Stanley Cup. Since 1910, it has stood as professional hockey's Holy Grail. The original bowl resides in the Hockey Hall of Fame in Toronto. Today, there are two Stanley Cups: a display cup that is a stand-in at the Hall of Fame and a presentation cup, which travels the world with players from the winning team each summer. As we get set for the Stanley Cup Final next week on ESPN and ABC, I had a chance to walk with one of the cup's chaperones and talk about the history of the hallowed chalice.

Tank Cooks BBQ Chicken & Homemade Chips from Brian Baumgartner's Book "Seriously Good Barbecue"

I took two recipes from his new book "Seriously Good Barbecue."
Mom's BBQ Chicken
Ingredients:
Bone-in Chicken Thighs
1 Cup of Barbecue Sauce
Zest of Lemon
2 tablespoons of parsley
Directions:
1. Preheat Oven to 425°F.
2. Season chicken thighs with salt, pepper, accent, and other seasonings.
3. Coast Thighs with 1/2 cup of barbecue sauce
4. Place Thighs on a cookie sheet lined with parchment paper and bake for 25 minutes.
5. After 25 minutes, flip the chicken and cook for another 20 minutes, drizzling excess barbecue sauce on the Thighs.
6. Place the remaining 1/2 cup of barbecue sauce on the thighs and broil for five minutes, placing it closest to the broil coil. This will allow the sauce to caramelize.
7. Finish Thighs with Lemon Zest and Parsley.
Homemade Chips
Ingredients:
3-4 potatoes washed and unpeeled
Seasoning of choice
Oil for Cooking
Directions:
1. Slice Potatoes thinly and soak in an ice-water bath for 20-30 minutes.
2. Drain potatoes and pat them completely dry.
3. Heat oil to 375°F. Make sure that the oil is hot before adding potatoes. This keeps the potatoes from soaking up the oil.
4. Cook in the oil until golden brown.
5. Remove with a slotted spoon and pat the potatoes dry with paper towels to remove excess oil.
6. Season while warm. I used a Barbecue Dry Rub seasoning and salt.

Tank Cooks Salt Encrusted Steak

Ingredients:
2 cups Kosher salt
4 tablespoons chopped fresh thyme
1 tablespoon chopped fresh rosemary
2 egg whites
2/3 cup cold water
2-3 cups AP flour
4 filet mignons (1-2" thick)
1 tablespoon unsalted butter
1 tablespoon olive oil
1 egg yolk
1 tablespoon water
1/2 tablespoon fresh ground black pepper
Directions:
1. At least six hours before cooking the steaks (and up to 24 hours ahead), combine the salt and herbs in the bowl of a mixer fitted with a paddle.
2. Add the egg whites and water and mix until thoroughly blended.
3. Add two cups of flour, a little at a time, until a dough ball forms. You may need to add more flour or water to get a moist and pliable dough that is not sticky. Cover the dough and set aside. If waiting overnight, refrigerate the dough and bring it back to room temperature.
4. Preheat the oven to 375F.
5. Pat the beef dry. Melt the butter and oil in a skillet, and when very hot, sear the beef on all sides.
6. Roll the dough out on a floured board to about 1/4". Cut into circles or squares large enough to wrap around each filet completely. Wrap the filets and seal the seams well.
7. Baste the dough with an egg wash made from the egg yolk and water. Place seams down on an ungreased baking sheet, and bake for 10 minutes for medium-rare. I recommend using a probe and pulling the steaks out 10 degrees below your desired doneness.
8. Remove from oven and allow to rest for 10 minutes. Remove crusts and discard them. Top steaks with a pinch of ground pepper.

As the Premier Lacrosse League (PLL) approaches its new season, I had a chance to walk with its founder, Paul Rabil. Many consider Rabil to be the greatest lacrosse player of all time. Playing 11 seasons in the Major Lacrosse League, Paul Rabil won the MLL Offensive Player of the Year Award thrice in 2009, 2011, and 2012, and the MLL MVP Award twice, in 2009 and 2011. He also won the MLL Championship twice, in 2011 and in 2015. Paul Rabil is coming out with a book entitled "The Way of the Champion: Pain, Persistence, and the Path Forward," a guide to embodying a champion's mindset in sports, business, and relationships. The 2024 season is significant for the PLL, which will again have its games on ESPN+. This year, they will assign teams to cities and hope to play home games soon. The PLL season begins on June 1st, with games every weekend through September.

Tank Cooks Cheesy Mexican Chicken

Ingredients:
small boneless skinless chicken breasts pounded ¼ inch thickness
1 can condensed cream of chicken soup
1 ½ cups shredded mild cheddar cheese
½ cup of milk
1 package taco seasoning mix
2 cups of tortilla chips
Directions:
1. Preheat oven to 375 degrees
2. Place chicken in a 13x9-inch baking dish
3. Mix soup, 1 cup of cheddar cheese, milk, and taco seasoning mix until blended
4. Spoon over chicken
5. Top with chips and cover with aluminum foil
6. Bake 30 minutes
7. Uncover and sprinkle with remaining ½ cup cheddar cheese
8. Bake uncovered for an additional 15 minutes or until cheese is melted

Tank Cooks Best Damn Air Fryer Pork Chops

Ingredients:
2 center-cut, bone-in pork chops, 2 inches thick
2 tablespoons brown sugar
Accent
1 tablespoon paprika
1 1/2 teaspoons salt
1 1/2 teaspoons fresh ground black pepper
1 teaspoon ground mustard
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1–2 tablespoons olive oil
Directions
1. Preheat the air fryer to 400°F for 5 minutes.
2. Rinse pork chops with cool water and pat dry completely with a paper towel.
3. In a small bowl, mix together all the dry ingredients.
4. Coat the pork chops with olive oil and rub in the mix. Rub it in well and liberally. Use almost all of the rub mix for the 2 pork chops.
5. Cook the pork chops in an air fryer on the air fry setting at 400°F for 12-14 minutes or until they reach an internal temperature of 140°F. Flip the pork chops over after 6 minutes.
6. Let Pork Chops sit for 5-10 mins before plating the meal.

Raised on Lond Island, Boomer Esiason was drafted in the second round of the 1984 NFL by the Cincinnati Bengals after starring at Maryland. He replaced longtime quarterback Ken Anderson and led the Bengals to Super Bowl XXIII while winning the 1988 NFL MVP. Five years later, Boomer joined the team he rooted for when he was traded to the New York Jets.
At the same time, he joined the Jets, Boomer learned his son, Gunner, had Cystic Fibrosis. From that moment, Esiason became dedicated to raising money for research to cure CF, launching the Boomer Esiason Foundation. Tim O'Brien, who was a partner at Cantor Fitzgerald, helped launch the foundation, raising money from the World Trade Center. The foundation has been largely successful, as CF patients now have a longer life expectancy and are living quality lives. This includes Gunner Esiason, who now has a family of his own.
Tim O'Brien and several members of the Boomer Esiason Foundation were among the victims of the September 11th attacks. For the walk, Boomer told me their story while visiting the 9/11 memorial.
Boomer Esiason just ended 22 years as co-host of the NFL Today on CBS. He recently extended his deal to remain co-host of WFAN's Morning Show. During the walk, we went over several topics, and was one of the more entertaining walks that I have had.
