Do steel cut oats need to be soaked overnight with an acid? 🧐
Do steel cut oats need to be soaked overnight with an acid? 🧐
Yes, we recommend soaking all your grains overnight! They not only cook in half the time, but they are more nutritious and digestible. Your tummy will thank you! 🙏🏻
Basically... soak your oats in whatever amount of water you're going to cook them in, but instead of cooking right away, soak overnight at room temperature.
Plus... for every cup of water, you add one tablespoon of acid such as lemon juice, apple cider vinegar, etc.
Then, 7 to 8 hours later (or overnight), when you're about to cook, you drain the oats. Catch the soaking water and measure it, so you can replace the same amount with fresh water (or milk) for cooking. You can also rinse the oats to remove any sour flavor.
Then cook as usual... except they should be done in half the time! 🙌🏻
This the simple explanation of how to do it.
For more details and how to soak other whole foods like beans, nuts, and seeds... I share more in my FREE Eat God's Way books.

Green grape jelly. Let me tell you how delicious it is. 🥰
Green grape jelly. Let me tell you how delicious it is. 🥰
Making your own jelly is similar to making jam… you just start with strained juice instead of mashed up fruit!
I love using Pomona's Pectin for thickening because it's sugar independent...
It doesn't matter which sweetener, or how much, for your jam or jelly to gel. 🙌🏻
Plus when you make your own fresh jellies and jams, you’re…
…reducing your aldehyde load.
…choosing what sweetener and amount works best for your needs.
…choosing what fruits work best with your needs, your diet, or in season.
You have so much more freedom, and you can tailor it to what you and your family needs.
Look at this beautiful, beautiful stuff! 🍇
In Eat God's Way, we're all about the freedom to work around your needs.

Making your own homemade jams and jellies is special. 🍓
Making your own homemade jams and jellies is special. 🍓
When you can make your own fresh sauces, juices, jams, jellies, etc., you reduce the aldehyde load on your body.
Aldehydes are present in fermented and preserved foods.
Your body prioritizes clearing them, because they really shouldn't sit around.
This means that your body is not detoxing things like heavy metals and other toxins as efficiently.
So if you can keep your aldehyde load low through bringing in fresh jams, jellies, sauces, and juices... then you're really going to help your body handle detoxing toxins more efficiently.
+ You have freedom with your sweeteners!
+ You can incorporate really high quality fruits that are in season or that fit with your diet better. You have so many options!
We really love homemade jams and jellies. ❤️

Everybody loves apples. 🍎
Everybody loves apples. 🍎
They actually haven't been my favorite fruit most of my life, but I really love them now.
Sometimes when you learn about how good something is, it grows in your heart or you learn to appreciate it.
What makes apples so special...
🍏 peel has a really nice form of fiber called pectin
🍏 potassium for your electrolytes - if your body is going through a hard time for any reason, potassium can help your body handle it
🍏 built-in water for hydration
🍏 and... natural fruit sugar to keep you going!
It's like a God-given electrolyte in a small portable package. You don't need anything special. You can tuck it in your purse or backpack, and take it on the road with you.
So many benefits to apples. 🍎
It's no wonder they say "an apple a day keeps the doctor away."
Apples, they're just so wonderful. 🥰

Smoothies get HUGE. 🥤
Smoothies get HUGE. 🥤
You're just adding a little bit of this and a little bit of that...
...and it really adds up!
As I'm showing you in the video, I've got an apple, 10 grapes, a cup of berries, half a head of lettuce, an English cucumber, celery, and a whole banana. Plus, remember you're going to add liquid in the form of yogurt or milk.
If I'm making a smoothie just for me, this is way too much! I would never eat this much in one sitting... yet, that's exactly what it would be in a smoothie, just blended up.
Better to be realistic with your smoothies!
Put in them what you would ACTUALLY eat in one sitting.
If we're anything in Eat God's Way, we're realistic!

Why make make your own homemade fruit sauces, fresh preserves, and fresh fruit juices? 🍓
Why make make your own homemade fruit sauces, fresh preserves, and fresh fruit juices? 🍓
Besides the amazing taste and freshness, they have fewer aldehydes.
Aldehydes are a food compound found in processed and preserved foods.
Your body prioritizes clearing aldehydes over detoxing things like heavy metals, glyphosate, and other toxins.
The more fresh sauces, fresh jams, and fresh fruit juices you can make, the lower the aldehyde load is on your body and the potentially more efficient detox your body is able to do. 💪

🔍 We have a mystery in our house! My half gallon and wide mouth quarts are disappearing.
It's like we have a black hole for jars! I cannot figure it out.
Our son Mikah keeps asking, "Mom, where are all our jars?"
All I can say is... "Mikah, I have no idea!"
When I open the fridge, we're only using two or three.
So... where are they? 🤷🏻♀️
I have a feeling it's my fault. I've probably given away more as gifts than I realize. And I probably sent some with Haniya and Naomi, our daughters, for various purposes, thinking "Oh, I have tons to spare." And some have cracked or broken, too.
Well... now I don't have tons anymore! So I ordered some and they just arrived. 🙌🏻
These mason jars are a staple in Eat God's Way. They're just a basic need for storing food in fridge, freezer, pantry, and even personal care items.

Why soak your grains before you cook and eat them?
✅ Reduces anti-nutrients that interfere with digestion and lead to mineral deficiencies.
✅ Improves texture and flavor.
✅ Shortens cooking time! 🙌🏻
And in case you think it's too much or too overwhelming, it's not. Do it once and you'll see it's easier and more worth it than you ever thought. 🎉

❓🙋🏻♀️ What meat should you eat?
❓🙋🏻♀️ What meat should you eat?
I get this question a lot. I think people want to choose the healthiest (grass-fed, pastured, etc.), but they’re also concerned about their budgets.
And personally, I think there’s one more considering we should throw into the mix: your food sensitivities and preferences.
As I share in this little clip, we eat a wide range of meats in our family. Yet personally, at this time, I mostly eat chicken and turkey breast. That’s because it works best for my body.
We are not all the same, so we shouldn’t all be eating the same.
That’s the kind of freedom you’ll find in Eat God’s Way. 🙌🏻
Not cookie cutter anything… just guidelines that can help you make the best choices for you and your family. You’re taking into consideration where you live, what’s available, what your budget is, and what works best with your body.

Batch cooking protein for the win! 🙌🏻
Batch cooking protein for the win! 🙌🏻
Here's my #1️⃣ reason why I like to batch cook our
meats:
So we have pre-cooked protein on hand for quick
meals and snacks. 💪🏻
Sometimes, we skimp on protein or leave it out
completely if it's not ready to go.
Yet, getting enough quality protein is essential for our
health.
So, if you can have pre-cooked or batch-cooked
protein ready to go, you're that much more likely to
meet your healthy protein requirements.
Having batch cooked meats is your saving grace for
getting enough protein! 🙏🏻

Setting up for a live Cook-Along! 😄
This time, I was getting ready to show our students how to make soaked quinoa. (We soak our grains prior to cooking, which not only saves on cooking time, but makes the grains more tasty, nutritious, and digestible.)
I host Cook-Alongs demonstrating Eat God's Way recipes and techniques every Monday and Wednesday for our students, and they're a ton of fun!

Surround yourself with things that bring you joy... like homemade crocheted dishcloths!
🙋🏻♀️ Is it just me or is it more fun to wipe down your counters when you're doing it with a colorful, crocheted dishcloth?
In this quick video, I'm showing you a stack of dishcloths I've crocheted recently.
While I'm in between bigger crochet projects and deciding what to do next (just finished a baby blanket), I've been crocheting ~1 dishcloth a day. They're soft and 100% cotton.
My indecision is leading to quite a stack! 😂
I'll send four of these to our daughter Naomi.
I pray and just relax when I'm doing them. So it's not only my downtime while making them, they also give joy later on when I use them.
Speaking of that, JOY is what I feel about how we Eat God's Way, too.
Choosing His foods and preparing them with His Love (because everything we do for others in His Name is sharing His Love 🤗 )... gives me great joy, too.

🤔 Think 12 to 24 hours ahead.
🤔 Think 12 to 24 hours ahead.
The simplest thing you can do... that's going to have the most impact on your organization and getting meals on the table... is to think 12 to 24 hours ahead.
Think... do you need to start anything soaking? Do you need to rinse and drain anything? Do you need to start something cooking that has soaked? Do you need to start something dehydrating that has soaked? Do you need to get out meat to thaw?
Usually for me, I'm thinking these thoughts at breakfast and dinner, and taking 5 to 10 minutes while I'm fixing other things, to move these other key things along.
This is a HUGE key to making Eat God's Way work for you. So you can serve those healthy meals without stressing or being overwhelmed. Most of us SAVE time and money simply by facilitating stages of meal prep in 12 to 24 hour cycles.

Kitchen accidents! 🤦🏻♀️ 😂
Kitchen accidents! 🤦🏻♀️ 😂
I just had to laugh at myself when I sprayed frozen white corn all over the place (while doing a live workshop this morning).
At least now everyone knows we're all in the same boat. The human one! 🤗
No matter how hard we try, we can't foresee everything. We can't do everything perfectly. We just do our best.
🤔 Hmmm... this sounds a lot like Eat God's Way.
We do the best we can with what God's shown us and given to us.
Knowing that we can't be perfect. Perfection is so impossible we would starve long before ever attained it (not that we could).
If we make mistakes, which we WILL do, no doubt about it... we must laugh and give thanks, dust ourselves off, and move along. Because the next breath we take brings an opportunity to try again.
What is Eat God's Way? It's our simple and methodical process to help you and your family get healthier and happier... save money and time... without giving up your favorite foods.
If you'd like to learn more about cooking this way, it's in my free Eat God's Way book. Plus I give you simple and easy sample recipes in the companion cookbook. Both books are FREE.

Be wary of hard and fast rules...
Be wary of hard and fast rules...
Remember... how hard people are trying. How imperfect life is. How much nuance there is in life.
It’s hard to be perfect. It’s so impossible we would starve long before we ever attained it. Which we couldn’t anyway.
Plus, why would we want to be perfect? On the surface, yes, ok, I do want to be perfect. But deep down, I have to admit perfection is boring, not stimulating, and there’s no growth or journey to experience. No people to relate to. Nothing to work on.
And finally, it’s that thing called circumstances. What’s “right” for me isn’t “right” for you and vice versa.
When you run into someone who’s dogmatic and preachy, you just have to let this stuff roll on by you.
It’s hard sometimes, I know. It can make you feel less than and like you’re failing. Don’t let anyone make you feel that way. If you’re trying, you’re not failing. You’re in process.
And (preaching to the choir here), you also have to try not to fall into the preachy trap yourself. None of us should be going around telling people what to do or how to live their lives.
Encouraging, sharing, leading by example… yes. Judging, pushing, shaming… no.
The irony here is that I am a proponent of a healthy diet we call Eat God’s Way.
Additionally, I do think it’s right for everyone. :)
However, unlike modern fad diets, Eat God’s Way is more about the way you prepare the foods that work best for you or the foods you believe are best for you… so they’re more nutritious and digestible.
It’s less about the actual foods and more about increasing nutrition and digestibility of those foods.
Rules… no. Guidelines… yes. Ability to make it your own… yes. Freedom… absolutely. Healing… praise the Lord!

Very important to soak your beans!
Very important to soak your beans! They're so much more nutritious and digestible than getting them from a can or cooking them other ways.
In this video, I'm starting to soak pinto beans. I love them. They're so pretty and speckled and they taste so great. A little bit meaty. I love how satisfying they are!
Soaking is very important because... it will shorten your cook time... but it's really important for your digestive system. There are complex sugars in beans that are really hard to digest and give a lot of people gas.
Yet the simple step of soaking — and draining away that soaking water — takes those complex sugars out of the beans and gives your digestive system a break.
So you get that healthy fiber, which is very important for detox and elimination, but without stressing out your digestive system.
