Poor Man's Meal - Hamburger Stew
Budget food is always a priority, especially in this day and age. The poor man's meal, in various forms and varieties, has been around since the great depression. It's a simple combination of ground beef, potatoes, onions, garlic, sweet corn, green peas, and some tomato sauce. You combine this with some seasoning such as salt, pepper, and Italian seasoning, it really doesn't become that poor tasting. It's actually quite delightful, inexpensive, and so easy to put together. The great thing is, the total cost is approximately two dollars per serving. You really can't go wrong with that.
Another thing to note is that the ground beef can be substituted for wieners, sausage, or whatever on sale. You always have to keep that budget in mind.

The Crispiest Chicken Burger Patties You'll Ever Make
As most of you know, I love chicken. In light of that, chicken burgers are one of my all time favourites. As fussy as I am, I insist my patties have three critical elements: crispy, juicy, and seasoned perfectly. Unfortunately, there is no store bought or restaurant version I could find. Once again, I set out on my quest to make my own. Let me tell you that I was not disappointed in this recipe as it certainly produces the crispiest chicken burger patties you'll ever make.
I use boneless skinless breasts for the recipe. Of course they have to flattened and carved into patties which seemly produces some waste. But I always use the left over batter to make nuggets. Everybody loves them for a snack. You could use boneless skinless thighs if you are so inclined. Another fantastic thing about the patties is they can be air fried or baked as well.
The trick to the crispiness of the patties is the sparkling water. The carbonization seemly works some magic chemistry. If you can't get your hands on sparkling water, you can use club soda, beer, or your favourite carbonated drink. I would keep in as neutral as possible, however.
As always, you can adjust the seasoning in the batter to your liking.

DELISH! One Pan Roman Chicken Recipe That's Likely to Make Everyone Fall in Love
The title certainly matches the dish. Believe me, you will fall in love with this one pan Roman chicken recipe. Made with simple seasoning such as Italian, salt, pepper, and thyme, it doesn't get much better. Now imagine the seasoning combined with Italian diced tomatoes, onion, garlic, and juicy chicken thighs. Let's face it, heaven has just descended. I might go as far to say that Gavius Apicius ( The Roman Gourmet) might have enjoyed it too.
Other than the simplicity, another great thing about the dish is it can be made up in about 30 or 40 minutes. This makes it a great midweek meal. I need not mention that it's one pan as well. This is actual a remake of an older Roman chicken recipe we did a few years ago.
As always, give it a try and let us know what you think.
