Chicken Skewers | Shish Tawook Recipe | Em’s Kitchen
INGREDIENTS
Marinade
3 tbsp yogurt
2 tbsp oil
1 tsp mustard
1 tsp tomato paste
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/2 tsp paprika
1/4 tsp turmeric
Skewers
Wooden sticks
500 g chicken, cubed
1 red onion
1 red bell pepper
1 green bell pepper
PREPARATION:
In a bowl, mix all the ingredients for the marinade. Add the chicken, and mix until coated.
Cover and refrigerate at least an hour or overnight.
Thread the chicken, peppers and onions on the skewers.
Grill skewers over medium heat from all sides until done and chicken is no longer pink.
Yogurt & tahini dip:
4 tbsp yogurt
2 tbsp tahini
1 tbsp lemon
1 clove garlic
1/4 tsp salt
1/8 tsp black pepper
1/4 tsp paprika

Desi Ghee- 3/4 cup
Milk- 1 cup

Method:
1. In a food processor, add 1 cup of besan, 2 tbsp desi ghee from 3/4 cup, and 2 tbsp milk from 1 cup milk. Blend until it turns coarse like bread crumbs.
2. Combine sugar and water in a medium saucepan over medium heat; bring to a boil, stirring, until sugar has dissolved. keep it aside.
3. In a heavy bottomed pan, add remaining desi ghee and the prepared besan mix. Roast it for 8-10 mins stirring continously on medium low heat. Make sure it doesn't burn.
4. Once it turns brown, add 1/2 of the remaining milk, keep roasting on slow flame while stirring continuously for another 3-4 minutes. Now add the remaining milk and roast while stirring continuously for another 5 minutes.
5. Now pour the prepared sugar syrup in it while stirring continuously. Stir until it becomes thick. Garnish with dry fruits and Serve hot!

300 grams Chicken Breast
1Tbsp. extra-virgin olive oil, plus more
for drizzling
10 baby potatoes, halved,
4-5 large shallots, peeled, halved
2 tsp Cayenne Pepper

1 Tbsp. unsalted butter, melted, divided
2 Tbsp. honey ( hot honey or regular)
2 tbsp coarsely crushed thick pretzel rods

Recipe:
Preheat the oven to 200/c.
Pound chicken to same thickness – using a rolling pin, meat mallet ( tip for even cooking + tender chicken).
Sprinkle chicken all over with olive oil, salt , cayenne pepper and black pepper. Rub in to coat. Flip over the chicken and repeat the process.
Place potatoes and shallots in a cast iron pan or a baking pan. Drizzle with oil, season generously with salt, and black pepper.
Toss to coat and arrange in a single layer.
Place chicken on top. Roast for about 10 minutes.
Meanwhile prepare the sauce. In a bowl add, 2 tbsp Dijon mustard, 1Tbsp. butter, 1 Tbsp oil, 2 tbsp honey. Stir to combine.
In another bowl, add 1 tbsp melted butter and 2 tbsp pretzels, mix and keep aside.
Take out the chicken. Brush chicken, potatoes, and shallots all over with some mustard mixture. Return to oven and roast for another 8 -10 mins and broil for 2-3 minutes for extra browning.

1:) Boil 3 cups of water with 1/2 tsp of salt. Add 1 broccoli (cut into florets ). After 1 boil. Take them out and place in the ice water. Keep it for 2-3 mins and then strain the water.
2:) In a pan, add 1 tsp oil. Let it get hot. Add 1 clove mint garlic and 1 red chilli finely chopped. Sauté for few seconds and add the broccoli. Let it cook for 1 min. Then add 1 tsp light soya sauce and cook for another minute and keep it aside.
🔶Chicken Recipe
🔹Ingredients
300 grams minced chicken
2 tablespoons oil
2 spicy red chillies ( finely chopped)
2 mild red chillies ( finely chopped )
4 cloves garlic ( finely chopped)
handful of basil leaves
🔹Sauce ingredients:
1 tablespoon oyster sauce
2 tablespoon light soy sauce
2 tablespoon Thai sweet chilli sauce
🔹Mix all the sauce ingredients and keep it aside.
🔹In a wok over high heat, add the oil, garlic and chillies. Saute for 1-2 mins.
🔹Add the minced chicken and stir fry for 2 mins, breaking up the chicken into small bits.
🔹Add the sauce and cook for 2-3 minutes.
🔹Add the basil leaves and stir fry for another minute.

Ingredients:
1/4 cup besan
2 tbsp chopped onions
2 tbsp chopped tomato
1 green chilli finely choopped
1 tbsp chopped coriander
salt to taste
1/2 tsp red chilli powder or to taste
1/4 tsp black pepper
2 slices bread
green chutney
tomato ketchup
cheese
1 tbsp oil
Method:
1. In a bowl, add besan, onions, tomatoes, green chilli, coriander, salt,red chilli powder, black pepper and water. Mix until well combined.
2. In a non stick pan, add 1 tbsp oil.
3.Dip 2 slices of the bread in the besan mixture and place it on the pan.
4. Let it cook for 3-4 mins on medium flame and gently flip it over.
5. Cook on the other side as well.
6. While they are on the pan, apply green chutney on one slice and tomato ketchup on the other bread. Sprinkle cheese on the green chutney.
7. Place the ketchup bread onto the other bread and make into a sandwich.
8. Cook for 1 minute and serve hot with chutney!
