HOW TO MAKE BACON THE SEMPER FI CHEF JASON HERTHA
In this video I will be showing you how to make bacon. The process is very simple that anyone can do it.
Ingredients:
1/4 Cup Salt
1/4 Cup Brown Sugar
1/4 Cup Maple Syrup
1 TBSP Garlic Power
1 TBSP Black Pepper
1 tsp Sodium Nitrate (Pink Salt) * Not to be confused with Himalayan Pink Salt. This prevents botulism.
Wood: Hickory
Smoke for about 2 to 3 hours until the internal temperature is 150 Degrees

In this video I will show you how to make a simple but amazing pasta sauce on the grill. After the sauce is made I will turn it into a baked mostaccioli with mozzarella and sausage topped with fresh basil in a well cured cast iron pan.
Pasta Sauce Recipe:
2 Cups Crushed Tomatoes (California Roma or San Marzano)
1 Small Onion (Small Dice)
2 Cloves Fresh Garlic (Minced)
9 Fresh Basil leaves
Salt & Pepper (Season to Preferred Taste)
A Pinch of Sugar (To Cut the Acid)
Baked Mostaccioli Recipe:
Pasta Sauce
Mostaccioli Noodles
3 Links of cooked Italian Sausage
1/2 Lb Of Whole Milk Mozzarella Slices (High Grade)
Fresh Basil Leaves to Garnish

I personality like using chuck roast because of its good amount of fat content to keep the beef moist making it great for hearty tacos.

n this video I will show you how to do smoked bbq pulled pork on the kettle grill. This is a simple and easy meal to prepare the whole family will absolutely love!
TOTAL COOK TIME: 6 TO 8 hours or an internal temp of 205 Degress
What you will need:
HIGH MEAT PROBE THERMOMETER: WITH LONG CORD
BBQ RUB:
1/4 Cup Kosher Salt or adjust to your liking
1/4 Cup Fresh Cracked Black Pepper
1/4 Cup Smoked Paprika
1/4 Cup Garlic
BBQ SAUCE: Any of your choice
COLESLAW: Any of your liking
ONION ROLL BUNS
OLIVE OIL or MUSTARD: To bush on the Pork Shoulder to make the rub stick.
WATER PAN
TIN FOIL: To wrap Pork Shoulder
WOOD CHUNKS OR A HALF SPLIT: Lasts longer then wood chips and a better smoke flavor.
SMOKE SHOULDER FOR 4 HOURS, WRAP IN TIN FOIL THEN COOK UNTIL FORK TENDER OR REACH AN INTERNAL TEMP OF 205 DEGREES.
*NOTE CHECK COILS EVERY NOW AND THEN AND ADD MORE COILS WHEN NEEDED. KEEP WATER PAN FILLED TO KEEP MEAT MOIST*
KEEP BOTTOM GRILL VENT OPEN ALL THE WAY AND TOP VENT OPENED HALF WAY.
DO NOT GET OBsESSED WITH THE GRILL TEMP. THE TEMP WILL START HIGH MAKING A NICE CRUST THEN LOWER GRADUALLY.
