This cake is super delicious! Especially topped with powdered sugar and berries! YUM! It has a slight sour taste with a super soft, moist, and mousse like texture. Indulge yourself with something scrumptious! Double the recipe if you want larger quantity.

Quick and Easy Yogurt Cake Recipe | Gluten-Free | No-Oil | Soft & Moist | EASY RICE COOKER CAKES

INGREDIENTS:
• 2 EGG YOLKS
• 2 EGG WHITES
• 1/8 tsp CREAM OF TARTAR
• 1/4 cup (50g) SUGAR
• 3/4 cup (200g) PLAIN GREEK YOGURT
• 1/2 tsp (3g) VANILLA EXTRACT
• 3 tbsp (25g) CORN STARCH
• 1/2 tsp (3g) BAKING POWDER

TOPPINGS (optional):
• Icing Sugar
• Fresh or Frozen Berries

HOW TO MAKE IT:
1. Separate 2 eggs into yolks and whites in separate mixing bowls
2. Beat egg whites for about 1 minute then add the cream of tartar. Beat until you get stiff peak, about 3 to 4 minutes
3. Add sugar into the egg yolks and beat until light in color
4. Add yogurt, vanilla, corn starch and baking powder. Beat until incorporated
5. Using a spatula, fold in the whipped egg whites in thirds; fold slowly in one direction, cutting through the middle, scraping the sides and bottoms. Take your time and fold slowly to prevent too much bubble or deflate the whipped egg whites. DO NOT OVER MIX. Only fold until almost all the egg whites are incorporated
5. Lined pot or pan with long parchment papers; crisscrossed 2-3 to extend up the sides of your pot/pan. This will make it easier to remove the cake later. Sealed the overlapping paper with batter as needed
6. Pour in batter and tap a few times to release any bubbles
7. Cover with a paper towel to catch condensation and bake. Mine took 2 bake cycles (60 min). Rice cooker varies so check after 2 bake and bake longer as needed
8. Cooled completely before removing from pot/pan. Top with icing sugar and berries is highly recommended

OVEN BAKING:
Bake in pre-heated oven of 325F (170C) for 25-35 minutes. Ovens varied so check around 30 minutes and bake longer as needed
