Rumble KIDS LUNCH IDEAS

Hi and welcome to my channel. In this video, I am sharing the different types of lunch we gave the boys. With lockdown and schools closed, coming up with different lunch and dinner ideas was a struggle, so we kept dinner more serious with plenty of veggies and tried to make lunch more fun. We wanted the boys to eat a variety of foods including Greek Food.

Homemade Pizza
To make the pizza dough:
• 1 1/4 cups warm water
• 1/2 tsp active dry yeast
• 1 tsp honey
• 1/2 Tbsp fine sea salt
• 3 1/3 cups all-purpose flour (420 grams)
Add the yeast, salt & honey to the water, mix and leave for 5 minutes
Place the flour in a bowl and add the water mix
Mix with a spatula, then use hands to knead the flour.
Cover with clingfilm, leave to sit at room temperature for 5 hours.
After 5 hours, remove dough from bowl, divide in half and fold each ball 8 times.
Cover with clingfilm and leave in fridge for 24 hours.
Before cooking the next day, remove from the fridge and leave at room temperature for 1 hour.
Each half of dough makes 12” pizzas.
To make the homemade sauce:
• 4 garlic cloves very finely chopped
• 340g Passata sauce
• 2 tbsp oregano
Mix together

Add the sauce to the pizza dough, followed by mozzarella cheese and ingredients of your choice. We used pepperoni. Bake for 7-9 minutes at 240C.

Green Lentils
This Greek dish is simple and easy to make, especially if you use cooked lentils like I did. They only take 5 minutes to cook, making this a quick and healthy lunch. I like to serve it with sausages and corn.

Cheese On Toast
This is one of the boys’ favourite lunches, and such a quick lunch to prepare. We use cheddar cheese as it melts so nicely and they have it with cucumber and pringles, although on this day, the little one wanted veggie stick crisps.

Stuffed Vine Leaves
This lunch takes a bit of time of time to prepare, and is best done early, but once its cooked, it can serve up to 3 lunches or dinners. The links below are the recipes to my vegan stuffed vine leaves.

Omelette
I usually use 2 eggs per omelette for the kids and add a little mozzarella to the top while it’s cooking. This takes minutes to cook, its quick and easy and one they always enjoy to eat.

Sweet Potato Fries
One large sweet potato makes enough fries for both the boys. Just cut it up into equal shapes and wait until the oil is hot before putting the fries in. I usually cook them for up to 10 minutes just to get a little crunch to them. For a healthier choice, bake them in the oven.
