Fast brisket on Big Green Egg
Smoked this brisket on my Green Egg in just over 9 hours. Salt, pepper and garlic rub, nothing fancy. I didn't do a competition trim, mainly cutting out as much of the deckle as possible. Smoked over lump with cherry and hickory at about 260⁰. Didn't wrap and this piece of beef only stalled for about 30 minutes.
