Research suggests that meat, including beef, pork, poultry or fish, forms carcinogenic chemicals when charred or cooked over high heat, as on a grill. According to HuffPost, it's those chemicals that make what are known as "grill marks." And while there's a wealth of data about the effect those chemicals have on humans, the data is less concrete.
