My Feeble Attempt at Mexican Restaurant-Style Cheese Dip (Queso Blanco)

Just trying to make what I like. I mention Cancun in Maryville as my favorite restaurant, but I truly love all the Mexican restaurants I've ever been to, except one I went to in NE Indiana in 2009 that was owned by rich white people and used tomato sauce in their salsa. That still haunts me. Out of courtesy, I will not mention their name.
