Potato and other peels shouldn’t have to reach an untimely end as food waste - with a little oil, a little heat, and seasoning of your choice, these unassuming peels will rival your favourite store-bought chips and be a serious zero-waste contender for your heart!

The cook-along says it all, but here here’s the basic recipe:
Time: 30min. (Prep time: 10 minutes + bake time: 20 minutes)
2 each parsnips, carrots, beetroots, potatoes (organic, if possible) fed two of us
Pinch of salt
Few twists of black pepper
Two tablespoons of olive oil
Extra seasoning of your choice - make them spicy, provence... or cajun! 🎉

Preparation:
Heat oven 200°C / 400°F / gas 5-6
Peel the veg as you normally would
Mix the skins in the olive oil, adding more if they are not all coated
Add salt, pepper and seasoning
Speak the peels on a sheet of baking paper and bake for 15-20 minutes in the oven, based on crispy-ness preference
Enjoy hot or cold, with or without a dip!
