Ingredient Notes:
Bread Flour: Highly suggest using bread flour; all-purpose won’t hold up as well with toppings.
Cheese: Authentic Detroit uses diced Brick Cheese. We use moisture mozzarella; buy a block and grate it for best results.
Pepperoni: Natural casing pepperoni (like Boars Head) will cup and char beautifully.
Sauce: Highly recommend our easy homemade pizza sauce for an amazing difference.
Pizza Pan: Authentic pre-seasoned steel Detroit Style Pizza Pans are best (highly recommend!), but a metal 9x13 inch baking pan on a hot pizza stone also works.
How to make Detroit Style Pizza:
Make Dough and Rise: Stir all ingredients (flour, water, yeast, etc.) together in a stand mixer bowl (or by hand). Knead until smooth and elastic (several minutes). Place in a well-greased bowl, coat with oil, cover, and allow to rise for 2 hours.
Press into the pan and Rise Again: Lay dough in a well-oiled pan and stretch into a rectangle. Cover and rest for 15 minutes to relax gluten. Gently spread dough to all edges and corners in a flat, even layer. Cover and rise again for 2 hours, or until dough has risen about ⅓ way up the pan.
Preheat Oven: Preheat to 450 degrees F. Place pizza pan on a pizza stone or baking sheet in the oven to preheat.
Add Cheese: Sprinkle cheese generously over the dough, ensuring it goes all the way to the edges of the pan.
Add Sauce: Use a small spoon to spread 2-3 lines of pizza sauce down the pan, over the cheese (don’t cover all the cheese).
Add Pepperoni: Lay pepperonis in a single layer over the top. Lightly sprinkle parmesan cheese.
Bake: Cook for 15-20 minutes, or until cheese is golden and bubbly. Cool for a few minutes in the pan before slicing into squares.
