Mutton Curry - Mutton Masala Gravy - Spicy Mutton Masala Curry
Mutton curry, also known as mutton masala gravy, is a flavorful dish featuring tender pieces of mutton simmered in a spicy, aromatic sauce. Here's a straightforward recipe to prepare this delectable curry:
**Ingredients:**
- 500 grams mutton (bone-in pieces)
- 2 large onions, finely chopped
- 2 tomatoes, pureed
- 2 tablespoons ginger-garlic paste
- 1 cup yogurt
- 2 tablespoons cooking oil or ghee
- 1 teaspoon turmeric powder
- 1 tablespoon red chili powder (adjust to taste)
- 1 tablespoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala powder
- Salt to taste
- Fresh coriander leaves for garnish
**Instructions:**
1. **Marinate the Mutton:**
- In a bowl, combine mutton pieces with yogurt, half of the ginger-garlic paste, turmeric powder, red chili powder, and salt. Mix well and let it marinate for at least 1 hour, or overnight for better flavor.
2. **Prepare the Masala Base:**
- Heat oil or ghee in a heavy-bottomed pot over medium heat. Add finely chopped onions and sauté until they turn golden brown.
- Add the remaining ginger-garlic paste and sauté for another 2 minutes until the raw smell disappears.
- Stir in the tomato puree and cook until the oil separates from the masala.
3. **Cook the Mutton:**
- Add coriander powder and cumin powder to the masala base, stirring well.
- Introduce the marinated mutton pieces to the pot, mixing thoroughly to coat them with the masala.
- Cover and cook on medium heat for about 10 minutes, allowing the mutton to release its juices.
- Pour in enough water to cover the mutton, bring to a boil, then reduce the heat to low. Cover and simmer for 45-60 minutes, or until the mutton becomes tender. Stir occasionally and adjust water as needed to maintain desired gravy consistency.
4. **Finalize the Curry:**
- Once the mutton is tender, sprinkle garam masala powder over the curry and mix well.
- Garnish with freshly chopped coriander leaves.
5. **Serve:**
- Serve the spicy mutton masala curry hot with steamed rice, naan, or roti.
