Today, Marti is in the kitchen, preparing a bulk muffin mix. Bulk mixes like this save time when you need to make muffins quickly. With the mixed dry ingredients, we only need some protein (eggs) and fat (oil) to make a basic muffin. Marti added half a jar of Christmas Jam (https://youtu.be/WGjbHiGFktk) to a batch of muffins to produce a holiday delight.

Bulk Muffin Mix

12c Flour
4T Baking Powder
1T Baking Soda
2t Salt
4 1/2c Sugar
Mix all dry ingredients carefully to ensure an even distribution of the Baking Soda. Store at room temperature in a sealed container (vacuum-sealed for the long term). When you want some muffins, measure out:
2 3/4c Muffin Mix
2 Eggs
1c Milk
1/4c Oil
Mix until well blended. Fold in any fruit or flavors. Bake 15-18min at 400 degrees.
