Plant foods contain lectins [carb binding protein]...
-we have lots of carb molecules on our cells,
called glycoproteins
some Lectins bind to insulin receptors even more strongly
than insulin itself
-activating insulin receptor results in weight gain
Lectins in grains cause reflux
IGE molecule reacts to lectins in grain, which
stimulate release of stomach acid

Eric Westman, Study, measured stomach acid levels,
-significant drop in ph within 6 days of stopping eating grains
Gluten causes leaky gut in everyone [worse with Celiac]
-gluten is a lectin
Example red kidney beans...cannot buy then raw, if eat as
few as 4 raw, could be lethal--unless boiled
-why we boil many foods, to reduce lectins
-but does not eliminate them
Safest to avoid legumes and all lectins

-body has natural antioxidant defenses
-G6PD, produces glutathione [most potent antioxidant
People with Favism don't produce enough antioxidant
