Guilt-Free Raffaello Cheesecake
Ingredients:

100 g erythritol
300 g skyr (plus extra for topping)
3 eggs
2 ripe bananas
25 g shredded coconut (plus extra for topping)
1 tsp vanilla extract
Instructions:

Blend:
Add all the ingredients (erythritol, skyr, eggs, bananas, shredded coconut, and vanilla extract) into your NutriBullet or blender. Blend until smooth and creamy.

Prepare:
Preheat your oven to 180°C (350°F). Grease or line a baking pan with parchment paper. Pour the blended mixture into the pan.

Bake:
Bake for 30 minutes, or until the center is set and the top is slightly golden.

Add the Topping:
Once the cheesecake has cooled, spread a thin layer of skyr on top. Sprinkle with extra shredded coconut for garnish.

Serve:
