Sourdough Crumpets

Ingredients:

200g sourdough starter (discard) how to make sourdough from scratch? Check the link for the full recipe and step-by-step guide.
100g all-purpose flour
2g salt (just a pinch)
10g baking powder (approx. 1.5 tsp)
200g water
Butter (for greasing the pan and crumpet rings)
Instructions:
Prepare the Batter:

In a large bowl, combine the sourdough starter, all-purpose flour ,baking powder, salt, and water. Stir until smooth.

Heat the Pan:

Heat a pan over medium-low heat.
Grease both the pan and the crumpet rings with butter to prevent sticking.

Cook the Crumpets:

Place the greased crumpet rings on the heated pan.
Pour the batter into the rings, filling them.
Cover the pan with a lid and cook the crumpets for around 10 minutes, until bubbles form on the surface and the tops are mostly set.

Finish Cooking:

Once the tops are set, carefully remove the crumpet rings. You can flip the crumpets to brown the tops for about 1 minute.

Serve:

Remove the crumpets from the pan and serve warm with butter, jam, or your favorite toppings.
