INGREDIENTS
2 cup whole wheat flour
1/2 tsp salt
1/2 tsp baking powder
2 tosp olive oil
3/4 cup hot water
INSTRUCTIONS
1- In a large mixing bowl, combine flour, salt, and baking powder. Mix briefly to combine, then add olive oil. Stir until the mixture resembles coarse crumbs.
2- Pour in warm water and stir to combine. Knead briefly until the mixture comes together into a craggy dough.
3- Turn the dough out onto a well-floured work surface.
Divide into 6 roughly equal portions. Roll each portion into a ball. Cover balls of dough with a plastic wrap, and allow to rest for at least 15 minutes.
4- Roll each dough ball into a pretty thin circle (Thick tortillas won't be tender).
5- Transfer tortillas into medium size hot skillet. Cook for about 1 minute, until small bubbles form on the top and brown spots form on the bottom surface. (If it takes much longer than a minute, increase the heat slightly.) Flip and cook the other side for about 30 seconds.
6- Remove from the pan and wrap the tortillas in a clean kitchen towel.
