Maybeee my phone fell into the bowl of soup…💀💀
RECIPE (6 servings, 45min prep time):
Soup:
-1 medium pumpkin
-2 medium carrots
-1 head of garlic
-1 onion
-thumbsize piece of ginger
-1 Tsp each Chili flakes, ginger powder
-1/2 Tbsp cumin, ground coriander
-salt to taste
DRIZZLE with olive oil and at 200C/400F for 30-35mins
-1 Cup (250ml) coconut milk
-2 to 3 cups (500-750ml) veg stock
-juice of 1 lemon
BLEND until smooth and heat it up if needed
