Todd's Texas Hill Country Breakfast | Blackstone Griddles
Todd Toven brings his Blackstone camping griddle to the heart of the Texas Hill Country for a breakfast packed with bold flavors and hearty portions. He’s serving crispy O'Brien potatoes, wild hog sausage, and fried eggs on sourdough toast.

Ingredients
4 eggs
1 lb. pork breakfast sausage (any flavor)
2 cups potatoes, chopped into small pieces
½ cup onion, diced
1 jalapeño pepper, diced (optional)
Blackstone S.P.G. Seasoning
4 slices sourdough bread (Rustik Oven recommend)
Cooking oil (for griddle)
Directions
1. Preheat your Blackstone griddle to medium-low. Drizzle oil on the griddle and spread it evenly.
2. Add the potatoes, onion, and jalapeño (if using) to the griddle. Season with Blackstone’s SPG seasoning, or use salt, pepper, and garlic. Stir occasionally while cooking.
3. Lower the heat to low. Shape the sausage into 2-2.5 ounce patties and place them on the griddle. Press down with a spatula to sear the patties. Flip once browned, and move them to the side once fully cooked.
4. Place the sourdough slices on the griddle. Flip when one side is lightly browned, and toast the other side. Add butter, if desired, and cut each slice in half.
5. Crack the eggs into Blackstone Egg Ring Tray on the griddle. Season with salt, pepper, or your preferred spices.
6. Once everything is cooked, remove from the griddle and serve immediately.
