Homestead Hog Butchering - Shoulder Quarter

We slaughtered our own hogs on the homestead. This video is for journaling purposes only and not meant to be authoritative.

In this video we are working on the shoulder quarter cuts. We turned it into 2 hocks, 4 butt roasts, and one picnic roast. Alternately, the shoulder meat can be used for ground meat and sausage making.
