► HOW TO MAKE SMOKED SALMON: The fish I used was from last season, so first it had to thaw overnight. Once it was ready, I coated the salmon with a dry brine made with 2 cups brown sugar, 1/2 cup kosher salt and a tablespoon of cracked pepper. I then covered the fish and let it sit in the fridge
