In this catch clean cook:
Heiko Winkler shows you a quick fishing reel of how the bluefish was caught, cleaned and then cooked. In this case Heiko is going to show you how to make smoked bluefish pate. Some may also just call this smoked bluefish fish dip, but Heiko thinks the word pate is more fancy.
After you catch and clean the bluefish you have to smoke the bluefish. After all this fish pate recipe calls for smoked bluefish. So by gosh this catch n cook will have smoked fish!
I would say the difference between fish dip and pate would be that the bluefish pate is more creamy and smooth and fresh than fish dip. But what do I know, I just know hot to make smoked fish that tastes great on a cracker or bread. I do think that pate is too fancy to eat on crackers so I eat it on bread. Must be a Florida thing? Probably not, it's just a Heiko Winkler thing.

I smoked the bluefish for about 3 hours. Let it cool down. Then blended the smoked fish with cream cheese and a little bit of mayo. For flavor I added a lemon, dill, hot sauce, Worcestershire sauce, and some jalapenos.
I added the lemon to the bluefish as the acidity neutralizes the fishy taste from the bluefish. It also helps preserve the fish pate for longer.
