Have you ever tried stuffed peppers? Why not give this Romanian recipe a go for meat and rice stuffed peppers? It's a delicious and filling food, which you can serve over the holidays.
Romanian meat & rice stuffed peppers recipe:
INGREDIENTS:
10-12 bell peppers
800 g minced meat
3 medium onions
100 g of long grain rice
50 ml oil
9 tomatoes
2 tins chopped tomatoes
1 tbsp tomato paste
200 g passata
3 bay leaves
1 tsp salt + extra for sprinkling
1 tsp ground black pepper + extra for sprinkling
2 tsp paprika
1 tsp all purpose seasoning
1 sprig dry thyme
2 bunches of dill
2 bunches of parsley
1 tsp dry lovage
DIRECTIONS:
Finely dice the onions. Add half the oil in a pan, on medium heat and fry it until golden brown. Add the rice and mix well. Fry for 5 minutes and remove from heat.
In a large bowl, add the minced meat, the remaining oil, salt, lovage , ground black pepper, paprika, all purpose seasoning,1 bunch chopped dill,1 bunch chopped parsley, tomato paste, the rice and onion
mix and combine everything together. Taste to see if it needs anymore salt, if it's fine, set aside.
Add oil in the pot you will use for the peppers, you need to make sure it's deep enough to fit over the height of the peppers, as you will add them whole. Add the bay leaves and fry for 1 minute.
Remove from heat and Add the chopped tomatoes and the thyme.
You now need to clean the bell peppers. Cut the tops of the peppers off, something like a hat and remove the seeds inside.
Fill each bell pepper with the mince mix, to the top and place each pepper in the pot.
Slice the tomatoes in half and add half a tomato on each pepper on top of the mince. Press gently in the mince, kind of like a cover. If you have leftover tomatoes, you can slice them and add them in the pot.
Fill the pot half way with tomato passata and water, or chopped tomatoes tin wash.
Sprinkle the remaining bunch of dill, the remaining parsley, sprinkle salt on top, ground black pepper and cook on medium heat for 1 hour or until the rice is cooked.
TIP: You can serve the stuffed peppers with sour cream and bread, or just bread, or simply on their own.
