Today we are showing How to Make the Perfect Smoked Pork Chop by reverse searing these massive thick cut chops we got from our local grocery store. We introduced a salt and garlic brine / cure and flavored the chops with Derek Wolf's hickory peach porter rub. We then got these chops onto our Weber kettle for a great easy cook. To finish things off, we "chef'd up our cuts by making a basil and tomato relish as well as an arugula salad for the perfect sides. Definitely give this recipe a try.
