It is perfectly paired with a nice cold beer and basket of golden fries! This Cheesy Oktoberfest burger recipe is all about celebrating wheat beer during harvest and has amazing beer infused caramelized onions, beer infused cheese sauce and a juicy hamburger patty between two tasty pretzel buns. Ingredients: **Caramelized Onions** 1 tablespoon of butter 1 medium white onion 1/2 cup wheat beer 1 tablespoon apple cider vinegar. 1 teaspoon maple syrup **Cheese Sauce** 1 tablespoon butter 1 tablespoon white flour 1/2 cup wheat beer 1 cup mozzarella cheese **Hamburgers - Per one hamburger** 1/4 pound ground beef and pork blend 10 small pretzels Pretzel hamburger bun 3 sliced bacon Directions: Melt 1 tablespoon of butter in pot. Thinly slice a medium white onion and add to pot with butter. cook onion until translucent and fragrant, about 5 minutes. Once onion is cooked, add 1/2 cup of wheat beer to the onions and simmer. Once simmering, add 1 tablespoon of apple cider vinegar and 1 teaspoon maple syrup and simmer until reduced to nice brown and saucy caramelized onions. Set onions aside. In another small pot, melt 1 tablespoon of butter. Once melted and bubbling, add a tablespoon of flour and mix until it makes a paste, or roux. Add 1/2 cup wheat beer to the roux and using a whisk, stir together and let simmer until sauce thickens. Once sauce is nice and thick, turn down heat to medium low and add one cup of mozzarella cheese and let melt, stirring constantly. Add salt and pepper to taste. Set cheese sauce aside. Place ground beef and pork blend in a bowl. Crush up 10 small pretzels with your hand, or in a food processor and add to the meat. Mix until the pretzels are well incorporated with the ground meat. Mold meat and pretzels into a hamburger and cook in frying pan and medium high until golden brown on each side. The the frying pan still hot, cook 3 pieces of bacon until crisp and brown because well, everything is better with bacon right? The flavors of the beef, bacon, onions and beer infused cheese sauce create a heavenly combination and the taste will knock your guests right over! Slice pretzel hamburger bun in half and place cooked and golden hamburger on bottom bun. Top with beer infused caramelized onions (don't be shy, pile them up high. This is where a lot of flavor lies) Top the onions with pieces of cooked bacon. For the grand finale, top it all off with the cheese sauce before placing the top bun on to complete this beautiful Cheesy Oktoberfest burger! Not only does it taste like a gourmet dish, but is also looks like one on the plate, drizzled with syrup and topped with decorative and flavorful bay leaves. The tenderness of the squash with melt in your mouth and the combination of flavors create a culinary masterpiece that your guests will rave about over and over again! Be prepared to write this recipe down over and over again, so it is always a hit! Ingredients: 1/2 medium butternut squash (pumpkin) 1/4 cup maple syrup 3 tablespoons butter 2 teaspoons apple cider vinegar 1 tablespoon fresh chili peppers 5 bay leaves Directions: Cut butternut squash in half lengthwise so you have two long pieces. Using a tablespoon, scoop out the seeds and fleshy inside of the squash taking care to leave as much of the squash as possible and not scooping too close the bottom. Use a peeler to remove all the skin. Place peeled butternut squash on a baking sheet and drizzle generously with olive oil . Sprinkle with coarse salt and ground black pepper. Place squash in the oven at 200C (390F) for 15 minutes or until slightly tender but not cooked all the way through. In a pot, add 1/4 cup maple syrup, 3 tablespoons butter and 2 teaspoons apple cider vinegar. Let syrup mixture melt together while stirring consistently to avoid burning. Once syrup mixture is well incorporated, add 1 tablespoon of fresh chili peppers and bring to a boil. Let simmer until thickened with the consistency of syrup. After removing the butternut squash from the oven and letting cool, make slits every inch from the bottom to the top of the squash. Be very careful not to cut all the way through the squash. The slits are to hold the syrup and keep the flavoring. We do not want to cut the squash in half, but make small slices to hold the liquid. Using 5 bay leaves, rip into smaller pieces and place in slits every 3-4 inches. Place butternut squash back into the over for 40-50 minutes or until completely tender and cooked all the way through. Every ten minutes, open the cover and glaze squash with syrup mixture, making sure to get the syrup into every slit along the squash. The syrup will help the squash become brown and delicious as it cooks. Once done, remove from baking sheet with a spatula and place on serving dish. Use any additional syrup you have to drizzle over the butternut squash. Leave the bay leaves in when serving for a beautifully decorative appearance and let people take them out, or remove all of the bay leaves before serving.

If you are having a party for Halloween or even just a family dinner on a Tuesday night, this recipe will be a huge hit! With the flavors of delicious cream, fresh herbs and pumpkin on a fluffy pizza crust, this dish will go into your regular rotation, especially during the fall months! Ingredients: pizza dough (all ingredients are approximate for the dough. Add a little at a time until you reach the desired consistency) 2 cups white flour (separated) Additional flour for rolling 1 teaspoon salt 1 package of yeast + 1 tablespoon warm water 1/2 cup cold water Pizza 1 small baking pumpkin 1 tablespoon olive oil 1 cup creme fraiche 6 ounces mozzarella 1/2 cup feta 1 tablespoon fresh rosemary Directions: Pizza Dough Add 1 cup white flour to bowl and add salt. In a small dish, add package of yeast and warm water and thoroughly combine until it makes a paste. Let sit for 5 minutes. Sprinkle yeast on top of flour and add 1/2 cup of cold water a little at a time until you get a wet dough. Let chill in the fridge for 20 minutes. Once chilled, remove from fridge and add remaining cup of flour and mix until you have achieved a firm dough you can handle with your hands without stickiness. If too sticky, continue to add flour a tablespoon at a time until you get the texture you are looking for. The dough should not stick to your hands at all. Once your dough is nice and firm, place on well floured surface and with a little extra flour on top. Knead dough until it feels well incorporated and then cut dough into quarters. Place each quarter into containers and place in fridge over night (preferably for 24 hours to let set). Pizza When you are ready to assemble your pizza, peel and chop one small baking pumpkin, and place on baking sheet. Drizzle with olive oil and bake at 390 F (200 C) for 20 minutes or until the pumpkin is tender. Take out of over and let cool for a couple minutes. Place a 1/4 of the pumpkin cubes in a separate bowl for topping and take remaining 3/4 cubes and puree with a hand mixer or in a blender. Remove dough from fridge and knead until flexible and stretchy. Roll or use your hands to form a thin pizza crust and stretch over pan or pizza stone (Tip* cover your pan or stone lightly with olive oil and corn meal so crust slides easily off when done cooking). Spread 1 cup creme fraiche all over crust as evenly as possible, then top with pumpkin puree. Once creme and pumpkin are evenly spread, top with chunks of mozzarella on the outside and feta on the inside, making sure to keep it even to each piece. Use remaining feta sprinkle all over pizza. Top with fresh rosemary and remaining cubes of cooked pumpkin. Drizzle with olive oil. Bake at 425 F for 5-8 minutes. Keep a close eye on the pizza while cooking to make sure the crust doesn't burn. Remove from over and lit sit for 5 minutes before slicing, Bon Appetite!
