🍳Omelet In The Hole | A Take On The Classic Toad In The Hole
Hello Food Junkie Followers,
Today I am sharing with you a recipe that is a spin on a classic, Toad In The Hole. This is my take on it and I am calling it Omelette In The Hole. If you are not sure what Toad in the hole is, it is where you take a piece of bread, cut the center out, and drop an egg in the hole and fry it in a pan.
In this dish, Omelette in the hole, you simply take your ingredients, cut the hole out of the bread, drop veggies and protein of your choice in the pan, add cheese, scramble an egg and drop it in the hold on top of the veggies, cheese, and protein. It is so delicious. Check out the video, it will show you how quick and easy this is to make.

Look Up Lodge is a Christian summer camp. What an awesome time we all had learned about God and each other. If you attend a church and are in our geographical area, you should check this place out. There were people from Tennesee, North Carolina, Georgia, and of course South Carolina here. Or I should say those areas are the ones that travel to come to this camp. Early August Garden and Yard Tour
Hey friends,
This is our normal monthly /bi-monthly yard and garden tour. I actually filmed this last week. I have finally gotten around to cutting the yard (my wife did) and I bush hogged for two straight days lol. Time to start working on the deer food plots and stands! I also got a few projects out of the way that I show in the video. Hopefully, I can share some of me doing the food plots. It is so hot and humid here and I am trying to get done that I had videoed me bush hogging anything or disking up the food plots. In the years to come, I am going to try to make the food plots no-till. This year I felt it was best to go with tillage as I need to kill the grass to get something annual established. It was either that or round up. You have to have a starting place I believe and I am not totally against round up, I just don't have a large sprayer to use. I think it has its place if used right and not in high amounts like you see with polyculture farming. Anyways, later guys.

Changing a Spindle on a Husquvarna RZ4623
This is a quick video on how I changed the spindle on my Husquvarna RZ4623. I am sure if you took it into a shop they would take the deck off as that is the proper way to do it. I manage to get it done with leaving the deck on. Also, the new spindle doesn't come with new bolts and you will most likely need them. They are self-tapping bolts, the new spindle doesn't have threads. The new bolts will create your threads for you. I recommend running them through each hold first before putting the spindle on the unit. Otherwise, if you have your spindle and your new bolts, this is a 1-hour job, thereabout.

South Port, NC | Oak Island Vacation Part III
The week of June 15th we went on our family vacation to Oak Island, NC. I grew up going here as a child and teenager, but it had been about 15 years or more since I have been. It was a great place to go and visit and I can't wait to go back again. I am sharing these experiences here with my Food Junkie Followers in the hope that you will enjoy them as well. I have three of these videos planned and I will try to mix them in with my normal food recipes, reviews, and such as I post them. This is Part III of our Oak Island Vacation. In this video, we visit the historic town of South Port, NC. It is about 20 minutes away from Oak Island, NC.
Southport, NC is a cool little town. It has many old historic homes and buildings. There are many bed and breakfast houses here and really great seaside restaurants serving fresh catches that come in on the boats daily. It has been the scene in Dawson's Creek and the popular movie "A Walk To Remember." Check it out if you are ever in the area.
Oak Island is a beach town in North Carolina. It’s separated from the mainland by the Intracoastal Waterway. The Atlantic coast is lined with beaches, and fishermen gather at the long Ocean Crest Pier. The Oak Island Nature Center has trails, plus displays on fossils and native animals. To the east, Oak Island Lighthouse has sweeping views over Caswell Beach and Bald Head Island. (Google Search)

Fixing the Hydraulic pedal Return Bracket on my Kioti CK3510SE
This video will show me fixing the hydraulic pedal return bracket on my Kioti CK3510SE. A few weeks back I was bush hogging and had a tree wedge in the undercarriage and bent this part. It was still drivable but the pedals were hard. I took a look to see what the issue was, and I was crushed to see that I had bent this hydraulic pedal return bracket. I called my dealer to order the part and told them what I had done. I fully expected to pay for this hydraulic pedal return bracket because it was my fault that it bent, well sort of. I guess you could say it was an act of God and really no one's fault. Even still, the dealership said it was covered under my bumper to bumper warranty. I love Kioti so far!

Oak Island, North Carolina Vacation Part II
The week of June 15th we went on our family vacation to Oak Island, NC. I grew up going here as a child and teenager, but it had been about 15 years or more since I have been. It was a great place to go and visit and I can't wait to go back again. I am sharing these experiences here with my Food Junkie Followers in the hope that you will enjoy them as well. I have three of these videos planned and I will try to mix them in with my normal food recipes, reviews, and such as I post them. Be on the lookout for Oak Island, North Carolina Part II, and then the third video from Southport, North Carolina.
Oak Island is a beach town in North Carolina. It’s separated from the mainland by the Intracoastal Waterway. The Atlantic coast is lined with beaches, and fishermen gather at the long Ocean Crest Pier. The Oak Island Nature Center has trails, plus displays on fossils and native animals. To the east, Oak Island Lighthouse has sweeping views over Caswell Beach and Bald Head Island. (Google Search)

Maple 🍁 Pancake 🥞 Cupcakes 🧁
Maple Pancake Cupcake
My oldest daughter Morgan came to me a few weeks ago and said Dad, I got a recipe idea. So she proceeded to tell me that she wanted to make pancake cupcakes. I thought it was genius. I told her we could make a cream cheese icing then thought, I bet Maple syrup would be well mixed it. This is how we came up with this recipe for Maple Pancake Cupcakes.
Now maybe they existed before and to be honest, I have not even looked. Either way, these are so delicious and you need to try these Maple Pancake Cupcakes at least once in your lifetime. We decided to put the icing on one of them while it was still warm and let me tell ya, it was a hallelujah moment!

How to make Squash Fritters
Recently, while on Facebook, I came across a recipe for Squash Fritters. This was really intriguing to me as I had some extra squash laying around from our garden and really wanted to try something different than the normal fried/stewed/sauteed squash. Squash Fritters was a perfect fit. I had already planned on something similar (I'll keep you in the dark on that for now) to make with the squash so I just thought why not go ahead and make these squash fritters now, so I did!

How to Fill In Pocket Holes made with a Kreg Jig
I made this short and quick video to show you how you can fill in pocket holes that were made with a Kreg Jig. The Kreg Jig is an awesome tool that makes joining boards together quick. It can leave sightly holes that sometimes can't be hidden though. I have found a way to solve that issue when using the Kreg jig. All you need is a 3/8 dowel rod that you can get from your hardware store. The one I purchased was 3 ft long and only cost .98 cent. I cut them in 3 in section and hammered them into the pocket holes that were made with my Kreg jig. Next, I used a flush-cut saw blade to cut them off flush with the surface. Then I used my orbital sander to sand them smooth. What you are left with is a nice surface that can be painted. These will show through stain though. In some cases, there may be a slight gap that you can then fill with some wood putty. Hope you enjoy this.

🥒 Cucumber and Vinegar (Quick Pickles)
Ok food junkie followers, I got a secret to share with you, I love cucumber and vinegar. There, I said it. In the summertime, we eat this weekly. It is especially good if we have fresh cucumbers. This is my way of making cucumber and vinegar. Sometimes I make it just like it says, with cucumber and vinegar. Other times I juice it up a bit as I did in this video. On a side note, these are not true quick pickles but they go by this name sometimes. They also go by refrigerator pickles sometimes too. Most of us around here just call them cucumber and vinegar. Give it a try and see what you think.

Pepperoni Grill Oak Island, NC
Last week we went on a vacation to Oak Island, NC. I grew up going to Oak Island as a kid but have not been back since the early 2000's. Being so, I hadn't tried many of the restaurants that are there now. I got some recommendations from some friends and tried to try those but with the Covid-19 virus, many were closed or just take out only. We spotted this cool little place the first day we were there, actually we passed it driving to our location. How to install a Tool Box on a Kioti CK3510SE | Review of Sheffield 12629 Field Box
Greetings Folks,
Today we are installing a small toolbox on our Kioti CK3510SE tractor. I chose the Sheffield 12629 Field Box from amazon to go on it. Two reasons why I chose it. It was cheap, and it was made in America lol. It is on the smaller side but I believe it fits the bill for me. I just need it to hold extra pins and such. That is all.
