How to make Homemade Küchel (German Doughnut)
Küchel a German Doughnut is a great Dessert, you can eat it plain dusted with Powdered Sugar or fill them with your favorite Jam or Chocolate Hazelnut Spread.
Küchel
Ingredients:
1 cup Milk, lukewarm
4 tbsp Butter, melted
3 tbsp Sugar
1 pkg (9gr) Vanilla Sugar
1/4 tsp Salt
1 tsp Rum
500 gr Flour
1 pkg Yeast
2 Eggs, room temp
2-3 tbsp EVO Oil for coating
30 oz Oil for frying
Powdered Sugar
Combine Milk, Butter, Sugar, Vanilla Sugar, Salt, Rum, Flour, Yeast & Eggs.
Use Dough Hooks and knead with Mixer until dough comes together.
Lightly oil a large bowl.
Place dough ball inside and coat with Oil.
Cover with towel, dough rise until doubled. (in a warm place)
Divide dough in 12 equal pieces.
Shape each piece into a ball.
Place on oiled cookie sheet, coat lightly with Oil.
Cover with towel and rest for 45 minutes.
Heat the Oil in a med sized pot, bubbles should appear when wooden spoon is placed inside.
Shape & stretch the dough ball, thin in the middle thick around the border.
Carefully place one at a time in Oil, spoon Oil over the dough to puff up.
Flip when golden, (try not to get Oil inside the Küchel) continue frying until other side is golden.
Note: the cooking will go fast.
Cool Küchel on Wire rack.
Before serving dust with Powdered Sugar, optional to fill with Jam or Chocolate Hazelnut Spread.

1-8" Flour Tortilla,
1-2 tbsp Pico de Gallo or sliced Tomatoes,
1-2 tsp Spicy Cream Sauce or Hot Sauce,
Salt,
Pepper
Season the beaten Eggs with a Pinch of Salt & Pepper.
Cut 3 Slices of the cooked Potato.
Melt the Butter in a 10" Skillet and place the Potato slices on one half, season with Pepper.
Cook the Potato until bottom is golden
Add the Eggs (covering the whole bottom surface of Skillet), cook until Eggs are almost set.
Sprinkle with 2 oz Cheese and top with Tortilla, wait a little until cheese is melted.
Flip and sprinkle the rest of Cheese all over.
Top the Potato Slices with the Bacon, Pico de Gallo (or sliced Tomatoes) and Spicy Cream Sauce (or Hot Sauce)
Fold the Tortilla in half and press down lightly.
Remove when Tortilla is golden and crispy on both sides.

This is how we make delicious Homemade Jelly Donuts. You can fill them with your favorite Jelly and dust them either with Powdered Sugar or sprinkle with Sugar,
Jelly Donuts
Ingredients:
2 cups Flour (sifted)
Salt
3 tbsp Sugar
1 pkg. Vanilla Sugar
1-1/2 tsp Dry Instant Yeast
2 Egg Yolks
2 tbsp Butter (melted)
2/3 cups Milk (warm)
Oil for frying (enough that the Donut can float)
Jelly (any flavor you like)
Combine Flour, Salt, Sugar, Vanilla Sugar and Yeast with Spoon.
Add Egg Yolks and Butter, use Mixer with Dough Hooks.
Incorporate Milk and mix until Dough comes together.
Coat the Dough with Oil, place into clean bowl and cover with Towel.
Let the Dough rise to double the size.
Cut Dough in equal sized pieces. (6) Shape each piece into a ball and place on oiled Baking Sheet.
Cover with Towel and let the Dough Balls rest for 30 Minutes.
Heat Oil until bubbles appear when wooden Spoon is placed inside.
Place Donut in Oil and cover with lid. Fry for 3 Minutes, remove lid and flip Donuts over and fry 3 more Minutes.
Remove when done and place on Paper Towel.
Fill squeeze bottle or piping bag with Jelly of your choice.
While still warm insert Jelly (as much as you like)
Dust top with Powdered Sugar.

Ingredients:

4 cups Granny Smith Apples, peeled, cored & diced
9" Springform
Preheat Oven 350° F
Line Springform with Parchment Paper & butter the Form.
Combine Flour, Baking Powder and Salt, set aside
Beat Eggs until foamy, add 2/3 cup of Sugar, Vanilla, Rum and melted Butter.
Incorporate Flour and fold under Apples.
Fill Springform with Batter and sprinkle with 1 tbsp Sugar.
Bake 45-50 Minutes or until tester comes out clean.
Rest Cake for 15 Minutes then remove Springform, cool completely on Wire Rack.
Cut and serve with whipped Cream or dust with Powdered Sugar.

Ingredients:
14 med Red Potatoes
1-1/2 tsp Italian Seasoning
1 tsp minced dried Onions
1 tsp Garlic Powder

Pink Salt

Preheat Oven 450° F
Line Baking Sheet with Parchment Paper.
Combine Italian, Onion, Garlic, and Cajun Seasonings, set aside.
Cut each Red Potato in quarters (Wedges)
Pour Oil & Seasoning Mixture over Red Potatoes and coat well.
Place Wedges skin side down on Baking Sheet, not touching each other.
Bake 25 - 30 Minutes.
(TIP: If you bake the Wedges on the skin side down, you don't have to turn them, they get crispy on both cut sides.)
Sprinkle hot Potato Wedges with Pink Salt.
Serve with Dipping Sauce of your Choice.

Refrigerate for 1 hour.
Preheat Oven 350° F.
Line Cookie Sheet with Baking Mat or Parchment Paper.
Shape Dough Balls (approx 30-31 gr each)
Place equally apart on Cookie Sheet.
Top each with extra m&m's.
Bake 10-12 Minutes.

Beef Rouladen (Instant Pot)
makes 4 Beef Rouladen
Ingredients:
4 Thin Beef Sirloin Tip Steaks,
4 tsp Yellow Mustard,
4 Strips Bacon (cut in 3 pieces each),
12 Pickle Sticks (3" long),
12 Carrot Sticks (3" long),
3/4 cup + 8 tbsp chopped Onions (divided),
Salt,
Pepper,
Paprika,
2-3 tbsp EVO Oil,
3/4 cup Celery (chopped),
1/4 cup Red Wine,
2 cups + 2 tbsp Beef Broth (divided),
2 tbsp Cornstarch,
2 tbsp Cranberry Sauce,
1 tbsp Sour Cream,
Instant Pot or Pressure Cooker
4 small Metal (4" long) Skewers or Toothpicks
Spread 1 tsp Mustard over 1 thin Steak, season with Pinch of Salt, Pepper and Paprika. Place 3 Bacon Pieces, 3 Pickle Sticks and 3 Carrot Sticks on Steak. Sprinkle with 2 tbsp of Onions.
Roll up the Steak tightly & secure with Metal Skewer.
Season the Roll all over with Paprika, Salt and Pepper. Repeat and make 4 Beef Rouladen, set aside.
Set Instant Pot to Sauté.
Heat 2 tbsp Oil, brown Beef Rouladen on all sides, add 1 tbsp Oil if needed. Remove and set aside.
Add 3/4 cup of Onions and Celery to the Pot and sauté.
Pour in Red Wine and deglaze, scrape up all the brown bits.
Add 2 cups of Beef Broth.
Return Rouladen, close and secure lid.
Set Instant Pot to Pressure Cook for 20 Minutes.
Following cooking, quick release after 5 Minutes.
Open lid and remove the Meat, set aside and keep warm.
Stir cooking Liquid use Hand Blender and blend well.
Combine Cornstarch and 2 tbsp Beef Broth to make a Slurry.
Set Instant Pot to Sauté and pour Slurry in. Combine well and bring to a boil. Simmer until Gravy is to your liking.
Add Cranberry Sauce, season with Salt &
Pepper to your own taste.
At the end add Sour Cream, incorporate well.
Return Beef Roulade to Gravy to keep warm or serve right away.

3 Bell Peppers (sliced),

1/2 tsp Pepper
1/2 cup Salsa,
12 - 9" Flour Tortillas,
Melt Butter in a large Skillet add Bell Peppers and sauté a Minute. Add Onions, Cumin and Pepper combine & continue to sauté until almost tender.
Add Chicken and Salsa, incorporate well and warm through, set aside.
Heat a Square Griddle Pan and place one Tortilla on top.
Sprinkle a handful of Cheese all around, top with Chicken Fajita Mixture and a handful of Cheese. Cover with another Tortilla.
Cook until golden & crispy, turn over and continue cooking until golden & crispy on both sides
Remove and cut in quarters.
This recipe makes 6 Quesadillas total of 24 slices.

Quesabirria Tacos are so delicious, the Meat is cooked in the Instant Pot and the Tacos are finished on the Griddle.
Quesabirria Tacos
Ingredients:
3,5 lb Tri Tip Roast
2 Onions (chopped)
3 Garlic Cloves (smashed)
3 tbsp Chile Sauce
2 Bay Leaves
24 oz Monterey Jack Cheese (shredded)
Salt
2 tbsp Oil
Water
24 - 6" Yellow Corn Tortillas
Cut the Roast in large Pieces season with Salt.
Set Instant Pot to Sauté, add the Oil, heat and brown the Meat Pieces on all sides.
Add one Onion, Garlic, Chile Sauce and stir. Pour in enough Water to almost cover the Meat, add Bay Leaves and stir.
Close & secure the Lid.
Pressure Cook for 50 Minutes, then Quick Release after 10 Minutes.
Remove the Meat and use 2 Forks to shred.
Pour some of the Birria Consome in a Bowl and keep the rest warm.
Dip a Tortilla in the Consome, place on a hot Griddle.
Top with Cheese and shredded Meat on one half.
Fold the Taco over when Cheese is melted and press down. Fry Taco until both sides are crispy, repeat.
Place Tacos on a Baking Sheet, keep Quesabirrias warm in a 200°F Oven.
Chop Cilantro and Onion.
Fill Taco with Cilantro and Onions, serve with Birria Consome as Dipping Sauce.

Place dough in bowl, cover with plastic wrap & refrigerate for 45 minutes.
Preheat Oven 350°F
Line Cookie Sheet with Baking Mat or Parchment Paper.
Make small balls (yield, 1 tbsp each) place on cookie sheet. Dip back of wooden utensil in flour, make a small indentation in the middle of each ball.
Bake 12-14 minutes, or until set. Cookie should still be pale.
Rest Cookies 5 minutes on the sheet, then transfer to wire rack to cool.
Repeat with the rest of the dough, which makes a total of 20 Cookies.
Dust completely cooled Cookies generously with Powdered Sugar.
Combine Jam and Lemon Juice, use a small spoon or piping bag and fill each Cookie with the Jam Mixture.

Zucchini (half Moon slices)
Chicken (shredded)
Artichoke Pieces
Garlic Slices (sautéed)
Garlic Oil
Parmesan Cheese
Green Onions (sliced)
Preheat Oven 450°F
16" Pizza Pan
Combine Water, Yeast, Sugar, Salt and Oil set aside.
Combine Flour, Italian Seasoning and Parmesan Cheese add Yeast Mixture and knead. Shape dough to a ball. Oil large bowl and dough, cover with a towel for 1-2 hours and keep in a warm place. Dough will double in size.
Remove towel and cut dough in half.
Roll out one half of the dough 1" bigger than Pizza Pan.
Transfer to Pan and place String Cheese in a circle, cover Cheese with dough to form the Crust.
Prick dough with fork, precook for 5 Minutes.
Top with Alfredo Sauce, Mozzarella Cheese, Zucchini Chicken, Artichokes, Mozzarella and Garlic Slices. Brush Garlic Oil on Crust and sprinkle Parmesan on the Crust.
Bake for 18 - 20 Minutes or until golden.
Sprinkle with Green Onions.

This is a great combination for a German Pancake, these Pfannkuchen are delicious with Jam, perfect for Breakfast or Brunch.
Peanut Butter Banana Pfannkuchen
Ingredients:
1-1/4 cups Flour
2 Eggs
1 Banana
2 tbsp Peanut Butter
1/2 tsp Salt
1 tbsp Brown Sugar
1 cup Milk
1 tsp Vanilla
10 tsp Butter
Blend together Banana, Eggs, Peanut Butter, Brown Sugar, Salt, Vanilla & Milk.
Whisk together Flour and Wet Mixture.
Rest Batter for 10 Minutes.
Melt 1 tsp of Butter in 8" Skillet on med/high heat.
Pour in 1 ladle of Batter, cook until set.
Flip and continue cooking until golden.
Repeat with the rest of Batter, makes 10 Peanut Butter Banana Pfannkuchen.
(Tip: keep cooked Pfannkuchen warm in the oven on lowest temperature until ready to serve.)

6 Mini Pizzas
Ingredients:
3 Rolls
14 oz Pizza Sauce
8-10 oz Mozzarella, shredded
3 oz Ham, diced
2-3 Mushrooms, sliced
18 Pepperonis, quartered
3-4 Sweet Peppers, sliced
1/2 Red Onion, sliced
2 Green Onions, chopped
4-5 tbsp Ricotta Cheese
Line Baking Sheet with Parchment Paper.
Preheat Oven 425° F
Cut each Roll in half and place (cut side up) on Baking Sheet.
Toast in Oven for 5 Minutes
Spread each half equally with Pizza Sauce.
Sprinkle with Mozzarella Cheese.
Top with Ham, Mushrooms, Pepperonis, Sweet Peppers, Red Onion and small Ricotta Cheese dollops.
Sprinkle with
Mozzarella Cheese.
Place on Baking Sheet.
Bake 12-14 Minutes.
Sprinkle with Green Onions & serve.

Rum Truffles
Ingredients:
12 oz semisweet Chocolate Morsels
3/4 cup sweetened Condensed Milk
1 tsp Rum
1/4 cup Cocoa Powder
1/4 cup Powdered Sugar
1/4 cup Chopped Walnuts
22 Truffle Paper Cups
Melt Chocolate Morsels over low heat, stirring constantly. Add Rum and stir.
Incorporate sweetened Condensed Milk.
Remove from heat, cover and refrigerate for 1-2 hours or until firm enough to handle.
Lightly butter your hands and shape 22 balls, 24 gr each.
Roll each Truffle in either Cocoa Powder, Powdered Sugar, chopped Walnuts, or keep plain.
Place each Truffle in a Paper Cup.
Store in an airtight container.
