Ingredients For The Salad: Baby Romaine Lettuce (2 Head Romain) Radish (4 Small) Cucumber (1 pound of Persian cucumbers) Cherry Tomato (1 Cup) Green Pepper (1 Green Pepper) Fresh Mint Leaves (1/2 Cup Chopped) Flat leaf Parsley (1 Cup Chopped) Purple Onion (1) Pita Bread (2) Olive Oil (2 Tablespoons) Salt and Pepper (1/4 Teaspoon Each) Ingredients For Fattoush Dressing: Honey (1 Tablespoon) Sumac (2 Teaspoons) Pomegranate Molasses (2 Tablespoons) Lemon (2 Fresh Lemons Juiced) Olive Oil (1/2 Cup) Garlic (4 Fresh Garlic Cloves, Minced) Salt and Pepper (1/4 Teaspoon Each) Directions: 1. Cut romaine lettuce into 3/4 inch stripes and add to a large bowl 2. Cut Radishes, thinly sliced crosswise. Add to the bowl. 3. Cut cucumbers, thinly sliced crosswise. Add to the bowl. 4. Cut Cherry tomatoes in halves. Add to the bowl 5. Cut up the green pepper into thin slices (Julienne). Add to the bowl. 6. Chop fresh mint leaves. Add to the bowl. 7. Chop fresh parsley. Add to the bowl. 8. Cut purple onion into thin slices (Julienne). Add to the bowl. 9. Take two pita breads and cut them into triangular pieces with a kitchen scissors. Brush them with olive oil and add salt/pepper. Set them on a sheet pan and into the oven for 375º for about 7-10 minutes or until golden brown. When you take them out of the oven, let them cool off for about 15 minutes. Add them to the bowl. Directions For Fattoush Dressing: In a small bowl, combine all of the ingredients and whisk everything together until well blended. Season with more salt and pepper, to taste if desired. Enjoy!

In a large bowl, add the arugula. 2. Cut up the Brussels sprouts in halves. Put them in a sheet pan. Add salt, pepper and olive oil. Put them in the oven 425º for 20 minutes. 3. When the Brussels sprouts have cooled, add them to the arugula bowl. 4. Cut up a small purple onion in half moon very thin and add to the arugula bowl. 5. Bake about 5 pieces of bacon in a sheet pan at 400º for 15 minutes. 6. Cut up the bacon very small and add to the arugula bowl. 7. Buy glazed pecans/walnuts and add to the arugula bowl. 8. Cut up fresh mozzarella cheese into small half cubes then add to the arugula bowl. 9. In a small bowl, add everything for the dressing and mix together then pour over the salad. Enjoy!

Ingredients for brining: Turkey (12 pounds) Kosher salt (1/2 cup) Rose water (1/2 cup) Oregano (2 teaspoons) Apple cider vinegar (1/2 cup) Maple syrup (1/2 cup) Honey (1/2 cup) Molasses (1/2 cup) Sugar (1/2 cup) Lemon Juice (1/2 cup) Rosemary, Sage and Thyme (couple leaves each) Ingredients for Turkey marinade: Butter (4 sticks, room temperature) Garlic (4 cloves) Sage, Rosemary, Thyme (couple leaves each) Salt and Pepper (1/2 teaspoon each) Twine Onion (two large) Carrot (four) Celery (four) Orange (two, one is for garnish) Pomegranate (one, just for garnish) Directions: Brining the Turkey: 1. In a big dish, completely submerge the turkey in cold water. 2. Add all of the ingredients for the brining process. 3. Refrigerate for 24 to 48 hours. Turkey Marinade: 1. In a medium bowl add butter. 2. Chop garlic very tiny and add to the bowl. 3. Chop sage, rosemary and thyme into small/thin pieces and add to the bowl. 4. Add salt and pepper. 5. Mix well and spread onto the turkey. 6. Loosen the skin of the turkey and add the butter mixture under there. 7. Twine the turkey legs together for even cooking. 8. Tuck the wings, so they do not burn. 9. Roughly chop onions, carrots celery and orange to make a bed for the turkey and also add what you can fit, inside of the turkey. 10. Add two cups of water with the bed of the turkey. 11. Roast Turkey 350º for 3-4 hours for a 12 pound turkey. Or, 15 minutes per pound. 12. Baste every 30 minutes. 13. The turkey is done when the thigh meat reaches an internal temperature of 165º F. To get an accurate reading, be sure that your thermometer is not touching the bone. Tip: You do not have to brine the turkey. I do it because it ensures the juices and flavors to really soak in. If you want to skip that part, that’s ok. Here is all you need to make a Mediterranean pasta with orange chicken: Put 2 table spoons of honey, juice of 1 orange and half a teaspoon of saffron into a small saucepan. Stir until the honey dissolves. Season three chicken breasts will salt and pepper on both sides and pout the saffron sauce over them. Refrigerate for 30 minutes.
