How to make Caramel Sauce
You can make this homemade carmel sauce in 15 minutes. It's really good!
Ingredients:
1 stick of butter (4 ounces)
2/3 cup brown sugar
2 Tablespoons Corn Syrup
1/4 teaspoon coarse grind salt
2/3 cup heavy cream, whipping cream or double cream
Melt all ingredients in a pot except the cream.
Cook it for 6 minutes to dissolve the brown sugar.
Then add your cream.
Stir to combine and allow to cool.

Fried Oysters with Avocado Sauce
This is a great way to start out a meal with this appetizer. Oysters are a favorite of mine. I make an avocado dipping sauce. If you are not into the avocado sauce, the oysters are excellent on a tossed green salad or with cocktail sauce or tartare sauce.
Ingredients:
2 avocados
1 teaspoon lemon juice
1 teaspoon cajun seasoning
1 teaspoon hot sauce
1 minced garlic clove
1/4 cup sour cream
1/4 cup mayonnaise
1 teaspoon Worcestershire Sauce
2/3 cup all purpose flour
2/3 cup corn meal
1/2 teaspoon salt
1/4 teaspoon pepper
Oil for frying
Fry oysters for 3 minutes total time @ 350F in the hot oil.

Butterhorn Rolls
This may be my favorite rolls of all time. My mother's recipe from the 1960's.
Ingredients:
1 cup milk
1/2 cup shortening
1/2 cup sugar
3 eggs
1 packet yeast
1 teaspoon table salt
4 cups all purpose flour
1 stick of butter melted for brushing.
I have made these using one stick of butter instead of the shortening and they came out fine. Not a big difference in flavor, so either is fine. Lard would be fine to use as well.
Scald one cup of milk.
Then add your shortening and sugar.
Cool mixture to lukewarm.
Put your milk into a large bowl and add your three eggs and mix.
Add your yeast.
Add your salt and flour.
Mix until combined, there is no need to kneed the dough.
Cover and allow to rise in a warm place, about two to three hours.
Divide into 3 pieces.
Roll out each piece to 12 inches rounds.
Use melted butter to paint on the rounds.
Cut each round into 12 triangles.
Roll up each triangle starting at large end and place on a greased baking sheet.
Brush the rolls with melted butter.
Allow to rise till doubled, around 30 minutes in a warm place. I do not cover them.
Bake @ 350F for 10 minutes.
Allow to cool and freeze for up to 3 weeks.
You can freeze longer, but then put in a paper towel or two. The paper towels will keep most ice crystals from forming. It is a good thing to do when freezing any bread or buns.
When you want rolls with your dinner, get the rolls out of the freezer and you can allow to defrost for 30 minutes in the plastic bag. Then place on your baking sheet and allow to defrost for another 30 minutes.
Bake @ 350F for 5 minutes.
You will have fresh baked rolls with your dinner in just minutes.
You can also bake them without freezing them.
Bake @ 350 for 15 to 18 minutes, depending how hot your oven is.

Herb Crusted Fillet Mignon with Red Wine Sauce
Get some flavor into the cadillac cut of beef with a great crust and red wine sauce.
Ingredients & method:
I will give the instructions for two fillets:
2 - 5 or 6 ounce filet mignons (mine was about 2 inches tall)
5 Tablespoons soft room temperature butter
1/2 teaspoon fresh thyme leaves (1/4 t dried)
2 teaspoons fresh parsley (1 t dried)
1/4 cup dried store bought bread crumbs
1 small shallot minced
1/4 cup red wine (I used ruby port wine)
1/2 cup store bought beef stock/broth
2 Tablespoons oil for sauté
While your steak(s) sit out, mix your room temperature butter with your fresh herbs and then the bread crumbs.
Put your butter mixture between two sheets of wax paper and roll out to 1/8 or 1/4 inch thick...
This process is easier than you think!
Put the butter into the freezer for 30 minutes till firm
Cut the butter into 3 inch size pieces to cover the steaks
Put back into the freezer
Heat your oven to 400F
Heat your fry pan over medium heat
Place your room temperature steaks into your fry pan and sauté for 4 minutes
Turn them and sauté 4 more minutes
Remove and place into a pan, then put into your 400F oven for four minutes
In your fry pan ... add your shallots
Then your red wine
Then your beef broth
cook for 4 minutes, take your steaks out of the oven, then add your tablespoon of butter to your sauce.
Serve your steak with the sauce if desired
NOTE**** If you prefer steaks more rare, I would use 3 minutes for all the steps of cooking.

Buttermilk Pie
This pie is outstanding. It reminds me of eating a wonderful flan, that melts in your mouth. You just have to make this, it will make you smile!
Ingredients:
2 cups sugar
4 Tablespoons all purpose flour
1/2 teaspoon kosher coarse salt
4 eggs (large)
1 cup buttermilk
2 teaspoons vanilla extract
1 stick of butter (4 ounces)
1 piecrust
nutmeg for dusting the top
lemon zest? I think it would be good in this pie, but have not tried it yet.... maybe a teaspoon of zest.
This is the first time that I have made this wonderful pie, your should make it too!
I love LOVE this pie.
It was pretty sweet and next time I think I will reduce the sugar to 1 and 1/2 cups of sugar for a bit more of a balance.
I have tried making homemade buttermilk before using vinegar and regular milk... it sort of works but to me is mediocre at best. Please buy some buttermilk, it will not break your bank and this pie deserves it for sure!

Street Food - NewYork Hot Dogs
I demonstrate how to make a clone version of the famous New York Hot Dog, it's good! I also use Sauerkraut under the sauce.
Sauerkraut is sliced cabbage that has been pickled.
Sauce Ingredients:
1 medium onion chopped (1 cup)
1/4 teaspoon coarse salt (1/8 t finely ground salt)
2 Tablespoons oil
1 garlic clove
1 Tablespoon tomato paste
1 teaspoon sugar
2 Tablespoons red wine vinegar or any vinegar
1 teaspoon hot sauce
Makes enough for 5 hotdogs.
