Sancti Dei Omnes - commemoration of All Saints in the Little Office of the Blessed Virgin Mary
https://gregobase.selapa.net/chant.php?id=14253
This is a bit that was removed in the 1962 revisions. It's a remnant of the lesser known of the three little Offices from medieval times: Office of All Saints, Office of the Dead and Office of Our Lady. Because praying the Divine Office plus all the Little Offices was prohibitive, some opted for just the Office of the Dead and others favoured Our Lady plus a commemoration of All Saints.

Clarification on singing the Kyrie eleison, Christe eleison, Kyrie eleison
When grabbing the clips I found a few more short Kyries, so looks like there's more to this puzzle, but the info in the video has kept me going so far.
The images of the Little Office and Book of hours are from the Internet Archive: https://archive.org
You can find lots of beautiful manuscripts searching for Book of Hours and Use of Rome and things like that.

O Jesu mi - Oratio Fatimae in Latina - the Fatima Prayer in Latin Chant - kinda Gregorian even!
O Jesu mi, ignosce nobis, libera nos ab igne inferni,
ad caelum trahe omnes animas, praesertim maxime indigentes.
O my Jesus, pardon us, free us from infernal fires,
to heaven draw all souls, especially those in most need.
This is likely to be the closest thing to an official Latin Fatima Prayer, probably being from Bishop José Alves Correia da Silva, the Bishop of Fatima at the time.
Here's a copy:

and here it is in Gregobase:

Lucis Creator Optime - the 2nd tune that maybe you haven't heard before
@e.r.hewitt8057 requested the Lucis Creator Optime that they sing at their place which doesn't seem to be on Youtube already. So I looked on Youtube and found two tunes, then looked in the Liber and found 3 - actually it gets more involved, but that can be for another video one day.
So, here is an attempt to guess the Vespers hymn tune that is being sung somewhere I've never been. It could be that they're using a totally different tune - Creator Alme Siderum is a good one for easy alternatives for this meter.

Most places are probably celebrating an External Solemnity of Corpus Christi this Sunday, but here are the propers for anyone who isn't. This should be in a playlist where you can listen to all the propers for the 2nd Sunday after Pentecost.

Crudelis Herodes - Gregorian Chant - Vespers Hymn for Epiphany - Roman
Here's the updated (1632) Vespers Hymn for the feast of the Epiphany. It's taken from the longer hymn **A solis ortus cardine** which has a verse beginning with each letter of the alphabet. Unfortunately the update changes the first letter, which kinda defeats the purpose, but the Humanists thought it better that way. Compare and contrast:
https://www.youtube.com/watch?v=DaazB4g9xXM
1. Crudelis Herodes, deum
Regem venire quid times?
Non eripit mortalia,
Qui regna dat caelestia.
2. Ibant magi, quam viderant,
Stellam sequentes praeviam:
Lumen requirunt lumine,
Deum fatentur munere.
3. Lavacra puri gurgitis
Caelestis Agnus attigit;
Peccata, quae non detulit,
Nos abluendo sustulit.
4. Novum genus potentiae,
Aquae rubescunt hydriae,
Vinumque jussa fundere
Mutavit unda originem.
5. Jesu, tibi sit Gloria,
Qui apparuisti gentibus,
Cum Patre et almo Spiritu
In sempiterna saecula. Amen.
English:
WHY, impious Herod, vainly fear
that Christ the Saviour cometh here?
He takes no earthly realms away
Who gives the crown that lasts for aye.
To greet His birth the Wise Men went,
led by the star before them sent;
called on by light, towards Light they pressed,
and by their gifts their God confessed.
In holy Jordan's purest wave
the heavenly Lamb vouchsafed to lave;
That He, to whom was sin unknown,
might cleanse His people from their own.
New miracle of power divine!
The water reddens into wine:
He spake the word: and poured the wave
in other streams than nature gave.
All glory, Lord, to Thee we pay
for Thine Epiphany today;
all glory as is ever meet,
to Father and to Paraclete. Amen.
