Easy Enchiladas
Easy Enchilada recipe for Green Chile Chicken. In this recipe we use flour tortillas, because the corn tortillas are difficult to work with. It takes 1 or 2 chicken breasts for a tray of 10 enchiladas. You should use both Green Chile Enchilada sauce and Salsa Verde sauce to avoid the enchiladas sauce being too sweet. We use about 3 cups of shredded Mexican or any other mixed cheese. For a delicious rice, we saute 1/3 cup onions, rice and corn from frozen section at grocery store. For easy clean up, we use foil pans lined with foil. For the best tasting enchiladas, grill chicken on BBQ instead of using baked chicken. You can also use the same recipe for cheese enchiladas. Easy Empanadas
Simple recipe for empanadas. Ingredients: 1lb of ground beef, 1/2 cup chopped onions, salt, pepper, oregano, 3 hard-boiled eggs (remove yolk), 1/3 cup sliced green olives (remove pimento). Brown meat with onions, add spices to taste, chopped egg whites and olives. Preheat oven at 350°. Fill pre-made shells, seal and bake at 350° for about 25-30 minutes until lightly golden brown. If you cannot find the pre-made shells, you may also use the dough from rolled pastry dough available from Aldi's. Enjoy!
