Who doesn't love beer battered fish? It's so, so good.
The ingredients for this recipe are beer and plain flour (plus some salt & pepper to season).
I use whatever beer that I have on hand in the fridge and any brand of plain flour.
The beauty of this recipe is that it is so simple and does not require you to measure anything.
You can shallow or deep fry when using this recipe. I prefer to use cooking oils like sunflower oil or peanut oil that are good for high temperature cooking however you can certainly use most types of vegetable oils.
This beer batter recipe is fast to make and can be used for fish, chips, chicken, and vegetables.
When I have cooked my fish I often use the left over batter to make tempura vegetables with whatever vegies that I have in the fridge. My kids love it.
When I go camping and fishing on holidays I use this recipe when I make fish tacos. I cook the fish in the beer batter and serve it with mango salsa and chipotle mayo on soft tortillas. It has become a tradition and we have our famous fish tacos for dinner several times on every camping holiday.
It is the only beer batter recipe that I use or need.

Well, technically, I am The Bait!
I use the wonderful aroma of my feet to find the beach worms:

I use the scent of my armpit on my fingers to bring the worm up, while I catch it with my other hand:

First tip – don’t have a shower before you go worming!
Second tip – you just need the beach worm to sniff around your finger long enough to be able to grab it
I have now caught beach worms this way many times. I taught myself to do this passing the time while my kids were swimming at the beach.

My wife and kids really love eating fresh Whiting. We all know what great bait beach worms are for Whiting, so being able to catch plenty of fresh beach worms keeps our fridge stocked with delicious Whiting fillets.

STEP 1
Purchase an IBC ( Intermediate Bulk Container ).
These can be found online and cost approximately $150. You will need to organize delivery unless you own a large van or trailer.
01:34 STEP 2
Remove the base and separate the metal frame from the polypropylene container.
01:40 STEP 3
Measure and mark the center of the metal frame. Cut the frame in half using an angle grinder.
01:50 STEP 4
Measure and draw a line around the center of the polypropylene container. Cut in half using an angle grinder.
02:28 STEP 5
Rinse your polypropylene bases with water to remove any residue.
02:48 STEP 6
You now have the bases for 2 garden beds.
Choose a level position for your new garden ( or level the ground as necessary ).
Place each metal frame with the cut edges facing to the ground, now place half of the polypropylene container in each frame.
04:00 STEP 7
Now it's time to drill a hole in each garden bed for the overflow valve.
I have used a cutting bit the same size as the plastic pipe that I am using so that it is a tight fit.
This really helps stop leaking. I silicone around the hole as an extra precaution.
04:45 STEP 8
Cut PVC piping to size for the inlet pipe ( approx 50cm/24 inches ).
Lay approx 3m of agg pipe in the base of the garden bed. Cover one end with some drain matting and secure with a cable tie. Hold the other end of the agg pipe in position with a brick or something heavy ready for the inlet pipe. Insert the inlet pipe into the agg pipe by approx 10cm/4 inches.
05:16 STEP 9
Fill each garden bed with blue metal or similar rock material. This would be about 22 to 25cm/12 inches in height from the bottom of the bed. The total height of the garden bed is approx 50cm/24 inches. The soil layer must be between 20 to 25cm/ 12 inches deep in order for the wicking process to work. ( The wicking process is the action of the plants drawing the moisture up from the water reservoir underneath ).
05:54 STEP 10
Cover the blue metal layer with geodesic cloth to prevent the soil clogging up the water reservoir.
I let the cloth come up the sides of the garden bed by about 10cm/4 inches and then hold it in place with soil as I am filling in the soil layer.

Fill the top layer of the garden bed with soil/manure/organic material.

Build the timber frame ready for screwing your hardwood planking in place.

Cut hardwood planking to size and attach to timber frame.

Attach top edging to garden bed.

My GO TO fishing knot for nearly all of my fishing. It is strong enough to land big fish, even large sharks.
Called a Half Blood Knot or locked Clinch Knot, it is easy and quick to tie.
I have caught many species of fish using the Half Blood Knot/Clinch Knot. Everything from small bait fish up to large Mulloway, Snapper, Kingfish, and Sharks.

Catching the biggest beach worms is really exciting because they are so strong and difficult to catch.
Learning to consistently catch huge beach worms is the pinnacle of beach worming.
There is great satisfaction in accomplishing this skill - you'll feel like Bear Grylls in no time!
Using your fingers, although a higher degree of difficulty, is the best method for catching these monster beach worms.
You don’t damage them, which means they stay alive, and actually catch more than when using pliers, because you don’t chop their heads off.
There are definitely keys to catching really big beach worms.
TOP TIP: One CRITICAL key is to pull the big worms out straight away.
Be quick, don’t hesitate. You see a lot of people getting hold of a big beach worm and digging. This is a No No!
When you grab a worm, there is about one second where the worm is shocked and doesn’t realize what is happening, it is actually a bit relaxed at this point. This is because you have grabbed it by the throat and it's in shock!
Very quickly, the worm goes into survival mode and jams it’s hundreds of hair-like-legs into the sand, pulling downwards in an effort to escape.
Once this happens, it is a stalemate and often the worm breaks or you just lose it.
I have learned that pulling the big beach worms out straight away is very important.

In this video come with me as I evaluate and fish 3 different beaches. I have produced this video in response to comments and requests from my first video on reading a beach. This video was filmed in July 2019 ( Winter ) on the South Coast of NSW.
I show you and explain why each fishing spot is chosen. You can the see the results when I fish.
We visit each beach at low tide so that I can clearly show you the beach structure, we then return at high tide to fish.
Each beach is only fished for 1 hour but there is plenty of action. If more time was spent at each location the catch would have been even bigger.

Australian Sand Whiting are a highly sought after fish. Fresh Whiting fillets are absolutely delicious.
Most of the fish that I catch, I don't scale or remove the guts because I just rip the fillets straight off! I like to keep things simple and do away with any unnecessary steps. Leaving the scales on a fish also makes it much easier to skin the fillet.
It is important to know the bone structure of a fish before you start filleting a fish.
When you understand where the bones of a fish are, it is much easier to fillet the fish. This video will show you the bone structure of a Whiting. How to remove the fillets, how to remove the bones and skin the fillets.
I also quickly fillet a Bream and an Australian Salmon.

Ball sinker to swivel, 15lb main line, 10lb flurocarbon leader 40cm long to a size 1/0 long shank hook
Rig 2 - BREAM 03:58
Standard single hook rig for Bream.
Ball sinker to swivel, 15lb main line, 10lb flurocarbon leader 40cm long to a size 3/0 suicide hook
Rig 3 - TAILOR, SALMON, MULLOWAY, FLATHEAD 04:40
Basic ganged hook rig (note: it is good to add a snap swivel to the ganged hooks to minimize line twist although I don't always do it).
Ball sinker to swivel, 20lb main line, 20lb leader 20cm long to a set of 3 or 4 x 4/0 ganged hooks
Rig 4 - BREAM, FLATHEAD and also TAILOR, SALMON, MULLOWAY, SNAPPER, TREVALLY 05:51
Classic all purpose rig with stinger hook.
Ball sinker or star sinker to swivel, 20lb main line, 30lb leader 40cm long to a size 4 suicide hook as a stinger and a 4/0 suicide main hook
Rig 5 - MULLOWAY, SHARKS 08:00
Classic Mulloway rig for live baits and slab baits.
Part one - 40cm of 30lb line with snap swivel and large star sinker at one end and a size 5 swivel at the other end.
Part two - 25cm of 30lb line tied to a 9/0 hook at the bottom and a stainless steel ring at the top.
Pass main line through the top of the size 5 swivel attached to the sinker line, then tie your main line onto the stainless steel ring.
You are ready to go!
Rig 6 - SAND WHITING (Double Hook Rig) 10:38
My go to rig for Whiting fishing off the beach
Main line 15lb mono
Whole rig using 10lb flurocarbon
Star sinker with snap swivel - adjust sinker size to suit current and casting distance.
Hook I use size 1/0 long shanks as standard.
Look at the vision on the video. Basically this is a Paternoster rig with 2 droppers and star sinker at the bottom.
I use 3 way swivels for tying on my droppers

Can you catch beach worms at night?
This was a question that had been going around in my head for a while. I had never tried it before. I’m sure that some super keen fishermen may have done it before but I had never heard of it.
Beach worms are blind so I figured that they would not be bothered by a bright head light shining in their face.
We went down to the beach at about 10pm at night. This is when it was low tide.
I had a reasonably bright head light of 100 lumens which worked well. There was not much wind, it was a beautiful night at the beach.
It was excellent. The beach worms were very cooperative. We actually had a lot of fun and caught some great worms!
The worming was pretty much the same as beach worming during the day except it was completely dark.
Certainly it would be a great thing to do on balmy summer nights.
This is a bonus. If you are busy working during the day and don’t have time to go beach worming, you can still go at night.
If you have plans to go for an early morning fish you can catch worms the night before.

Once you have been beach worming you don't want to waste any of that precious bait.
There are 3 main methods of storing beach worms that I use.
The first method is keeping the beach worms alive. If you look after them, worms can stay alive for approximately 48 hours. This means that you can potentially have several fishing sessions during that time and your worms will be fresh and alive.
The second excellent way to store your beach worms for future use is to dip them in Methylated Spirits and then freeze them. Other than using fresh alive worms this is the next best way to keep them.
The third way to store beach worms is to salt them and freeze them. This also is a proven method, I have a friend that I taught to catch beach worms who uses the salting method. He fishes in a local lake with his salted frozen worms and catches an abundance of Whiting, Beam and Flathead. You would be amazed and the fish he catches. Frozen beach worms are also his main bait for beach fishing.
Beach worms will live longer if you catch them with your fingers because you cause much less damage to the worm than when you use pliers.

Metho recipe/method:
- Pour approx. 200mL Metho into a small container
- Add 8 drops red food colouring
- Soak your worms for about 30 seconds
- Take the suckers out, bag and freeze 'em!
