Breakfast - ShamMOCK (Shamrock copy cat) Shake with a little lunch prep - Cobb Salad! - Both THM S
ShamMOCK Shake:
1/2 Unsweetened coconut milk
1 cup almond milk
1/4 avocado
2 tsp vanilla
1/2 tsp mint
1 scoop (1/4 cup) Pristine Whey
Pinch of salt
Large handful of spinach
2 TBS super sweet
1 cup ice
Blend well, top with a little fat free Redi Whip enjoy!
Salad
Bed of your choice of greens ( I use a combo of iceberg and green leaf)
2 slices bacon crumbled
Small bit of cubed cheese
Blue Cheese
1/4 avocado
1 sliced boiled egg
Chicken breast pieces
Top with ranch dressing thinned out with pickle juice!

Banana Split Overnight Oats-THM E
1 cup Whole Oats
1 cup plus 3 tbs almond milk
3 tablespoons Quick Cut Steel Oats
3 doonks Stevia
Pinch of salt
1 banana cut into small pieces
A few small pieces of pineapple (optional)
3 or 4 frozen dark sweet cherries (optional-I left out by accident🤦🏻♀️)
4 fresh or frozen strawberries cut into small pieces
Mix all ingredients together in bowl
Few chocolate chips OR👇🏻
Drizzle A few spoonfuls of Handy Chocolate Syrup from Trim Healthy Cookbook ( page 479 ) into pint size mason jar
Fill 2 pint size jars with ingredients, cover and put in fridge overnight.
Enjoy!

Sweet Potato Breakfast Bowl with Peanut Butter Sauce 😳-THM E
So here's what I did:
One small to medium sweet potato, cooked (I steamed mine)
1 large tbsp. 0% fat Greek yogurt
1/2 tsp cinnamon
A pinch of nutmeg
A pinch of salt
1-2 tsp on plan maple syrup
3-4 tbsp. almond milk
Whip together with food processor or hand mixer until silky and smooth.
For sauce:
1/4 cup defatted peanut flour (I was out of flour, so I used 2tsp peanut butter)
3-4 tbsp. almond milk
1/2 tsp Gentle Sweet
Mix sauce until a nice, saucy consistency - add more almond milk if necessary.
Top sweet potato with a few slices of banana and drizzle with peanut butter sauce. Add a tsp of whole oats, crushed nuts or on plan granola for some crunch. (If you use peanut butter, leave out nuts to avoid going over 5 grams of fat in your E)

Sweet and Spicy Monte Cristo - BOMB SANDWICH
-2 Slices of E bread of choice (I use Pepperidge Farms Sprouted Whole Wheat in this video)
-Either a LCC or a tablespoon of whipped cream cheese (just stay below 5 grams of fat)
-5-6 diced jarred jalapeno slices diced small (you can use fresh if you want)
-1 TBS on plan jam of choice
-Turkey breast slices
-1/3 cup egg whites
-1 tsp baking blend
-1/2 tsp baking powder
Mix cream cheese and jalapenos and spread on one slice of bread. Spread jam on other slice of bread. Add turkey and assemble sandwich.
Mix egg whites, baking blend and baking powder. Dip both sides of assembled sandwich in egg mix.
Grill until crispy.

Breakfast Pizza - THM S
Easy peasy...
Low carb tortilla
Sauce: 2 tsp cream cheese with 1 tsp mayo, a splash of cream and seasonings of choice (I used garlic and onion powder and creole seasoning)
Spread over sauce
Top with:
2 scrambled eggs
Crumbled bacon or sausage or ham
Spinach
Cheese of choice
Any other toppings you might like
Air fry on 400 for 5-6 minutes or until crisp.

AMAZEBALLS Banana Split Pancakes-THM E (No beavers were harmed in the making of this video)
Seriously, these are the best pancakes I’ve ever eaten.
Make a batch of fluffy white banana pancakes from trim Healthy Table, page 339. Top them with a few banana slices strawberry slices, a sprinkle of coconut some Greek yogurt, a tiny sprinkle of crushed nuts, and drizzle Handy chocolate syrup from trim healthy cookbook on top. Try not to die when you eat them because they are that good.

Hawaiin Fried Rice with Sweet and Sour Sauce!
Rice:
1 bag cauliflower rice (I used one with mushrooms and asparagus in the mix)
1/4 cup broth
1 cup seasoning blend
1 small can of mushrooms (use fresh if you’d prefer)
3 cups cooked brown rice
1 cup fresh pineapple chunks
2 TBS Braggs Aminos (use soy sauce if you prefer)
1 tsp crushed garlic
2 cups cooked/cleaned shrimp (use chicken breast is allergic to shrimp)
1/2 egg whites
Use large skillet. Sauté seasoning mix in a bit of cooking spray. Add riced cauliflower and broth and cook until tender and liquid is gone (7-8 minutes). Add everything else except eggs whites and fry for a few minutes. Move rice to side of pan and egg egg whites. Scramble and when cooked, mix with rice.
I like to fry mine long enough that the bottom gets a bit crispy. Then mix and it’s done. Top with sweet and sour sauce.
Sweet and Sour sauce:
9 TBS tomato sauce
2 TBS ACV
5 TBS super sweet
1 tsp blackstrap molasses
1 cup fresh pineapple
Blend together until smooth. Simmer small saucepan until it reduces a bit. Maybe 3-4 minutes. Drizzle over rice.

Smoothie Bowl!
E version:
3/4 cup 0% fat Greek yogurt
1/4 cup 1% cottage cheese (replace with yogurt if you prefer but this adds a lot of creaminess)
1-2 tbs super sweet
1 medium frozen banana
1/2 cup almond milk
1 tsp greens powder or 1 cup spinach
Blend until smooth. Should be thick. If it is too thin add some ice and a sprinkle of gluccie and blend some more.
Spread in bowl and top with blueberries, strawberries, a sprinkle of unsweetened coconut and a sprinkle of chia. You could add some sliced banana pieces as well, but don’t over do it.
S version:
3/4 cup 0% fat Greek yogurt
1/4 cup 1% cottage cheese (replace with yogurt if you prefer but this adds a lot of creaminess)
1-2 tbs super sweet
1 cup of frozen berries or a combo of multiple (keep blueberries to 1/2 cup or less in S)
1/2 cup almond milk
1 tsp greens powder or 1 cup spinach
Blend until smooth. Should be thick. If it is too thin add some ice and a sprinkle of gluccie and blend some more.
Spread in bowl and top with strawberries, raspberries, a few nuts, unsweetened coconut, a few chocolate chips, a tbs of PB and some chia.

Black Cherry Cream Soda! THM Style
I love soda and and one of the most difficult things for me to give up on this journey. Last night I saw a black cherry soda in the store and I was dying to have it. I kept moving. Actually no I bought it for my husband I made him taste it.
So when I woke up this morning I was still craving soda. So this is what I made.
2 tbs ACV
3 doonks stevia
1/4 tsp caramel extract
1/4 tsp cherry extract
1/2 tsp vanilla
Pinch of salt
1/2 tsp MCT oil
24 ounces black cherry seltzer
Mix and pour over ice.

Air Fried Pineapple on Pancakes!
Oh my word, this air fried pineapple is one of the best things I’ve ever eaten.
Mix together a couple tablespoons of Supper Sweet or Pyure with a 1/2 tsp blackstrap molasses. Mix until brown sugar consistency. Cut pineapple into chunks or slices. Sprinkle brown “sugar” mix on each side. Air fry for 10-12 minutes in 390 or until Golden, sticky, juicy and THE BOMB.

Biscuits and Gravy - THM STYLE!
Who doesn’t love biscuits and gravy? Linked below is the recipe for the biscuits. For the gravy I just cooked up sausage, in any amount you want, add some xanthan gum. It doesn’t take much just a little sprinkle over your sausage. Add some heavy cream and some almond milk and cook until it’s nice and thick. I had a lot of pepper to mine.
I cooked my biscuits in the air fryer for five minutes. They came out perfect. The only deviation from the recipe is I wisked my egg whites to soft peaks before adding to the mix.
