Quinoa Bowl and Quinoa Parfaits
I cooked 1 cup of quinoa in 1 1/2 cups of water and 3/4 cherries for 1 minute in instant pot and then did a manual release.
I ate half with some sweetener, cinnamon and almond milk, and the other half I made into parfaits using yogurt, chocolate sauce, strawberries and bananas!

More crappy gas station Breakfast! Taquitos or Tornados-whatever you say, they are bomb. THM-S
It's clear I love crappy gas station food. I can't help it. It's who I am!
So...I HAD to replicate the Tornados we always used to get on our "travel stops".
Masa Wonder Wraps, filled and fried. Holy...yum.
Fillings I used (but get creative and do what sounds good to you!)
Chicken And Chive Taquitos
-1/2 cup canned chicken (or use your fancy roast chicken, whatevs)
-1 1/2 TBS whipped cream cheese with chive (use plan with real chives if you want)
-Sprinkle of shredded cheese (use your fave)
-Few leaves of spinach chopped up
Mix super well, add a small amount to your wonder wrap, roll up and seal with egg white.
French Toast Taquitos
-couple of cooked egg whites
-tsp of on plan maple syrup
-one chopped up sausage patty
Mash up well with fork, add a small amount to your wonder wrap, roll up and seal with egg white.
After filling, fry in a small amount of coconut oil on each side. EAT HAPPY! IF you have leftovers, reheat them in an air fryer and they will be super crispy!

Pizza Rolls Failed and Turned Hot Pockets and Sprite GGMS THM S
I had a recipe that looked PERFECT...but alas...it was a FAIL. The dough was crumbly and impossible to work with. So I tried a different dough....and FAIL.
SO - I made a big wonder wrap without the water, filled it with a mix of cheddar, mozzarella, sugar free pizza sauce and diced pepperoni chunks. Filled the wonder wrap, folded, sealed the edges with egg white, put on tin foil, brushed all over with melted coconut oil and air fried for minutes. Viola - healthy hot pockets!
Sometimes a fail is a big win, if you just follow through!

PB Custard Shake (S-from Wonderfully Made and Dearly Loved)& Snickers Gluccie(FP)
Both recipes are great, but my homemade almond milk was VERY overpowering and took away the flavor of each. I'll make these again, but with different almond milk.
For the gluccie pudding, follow the Salted Caramel Gluccie from Trim Healthy Cookbook, but add 2 tbs cocoa and 2 tbs defatted PB powder and an extra 2 tbs of nut milk.

Breakfast Bowls with Avocado Cream...YUM. THM-S
The bottom of my bowl is air fried diced radishes. You could also use riced cauliflower or you could sauté your radishes with some bacon or sausage.
On top of that is some crumbled sausage, topped with a sunny side up egg. But the real star of this meal was my avocado cream.
Avocado Cream:
1/2 and avocado or about 1/4 cup frozen chunks
Splash of lemon juice
Couple shakes of creole seasoning
Couple shakes of hot sauce
A little garlic
1/4-1/2 cup 0% plain Greek yogurt
Zing it up in a food processor. I use a Ninja Express Chopper.
Spread that on anything! SOOOO yummy.

I also replace 1/2 cup of the Baking Blend with oat fiber.
When it comes out of the oven, sit for 5 minutes, then lay in one side for 15, then the other for 15. Do this twice.

Oatmeal Raisin Cookie Shake and Lady Muscles THM E
So....I didn't have zucchini. I have a GOOD feeling that if I had, this would have been a great shake. I replaced it with okra. In my opinion...mistake. All I could taste was okra. Drank it anyway, because it's a bucket of health.
I will make it again, but next time, with the zucchini!

Thai-ish Lettuce Wraps - THM S
This is my take on the Thai Lettuce Wraps from the Cheesecake Factory, using only the parts I really like!!
-Cooked chicken, seasoned however you like. I use frozen precooked blackened chicken.
-butter lettuce leaves
-A few carrot matchsticks
-a small pile of shredded purple cabbage
-Asian Zucchini slaw
-Peanut Sauce
-Sweet Chili Sauce
Asian Zucchini Salad
-One small zucchini (you are welcome to use cucumbers if you prefer, but ew)
-pinch of mineral salt
-sprinkle of crushed red pepper flakes
-2 tbs rice vinegar
-2 tsp sesame oil
-1 tsp Super Sweet/Pyure
-sprinkle of sesame seeds
Peel zucchini and slice in half, then slice in very thin slices. Mix all ingredients and set aside.
Peanut Sauce
-1 TBS natural PB
-1 TBS defatted PB powder
-2 tsp Bragg's Liquid Aminos
-2 TBS lime juice
-1/2 tsp crushed garlic
-1 tsp chohula
-2 pinches salt
Mix well, set aside
Sweet Chili Sauce
-1/4 cup rice vinegar
-1 tbs fish sauce
-1/4 cup hot water
-3 TBS super sweet/pyure
-juice of one lime
-1 tsp garlic
-1 tsp chili paste, or 1 tsp red pepper flakes (less if you don't like really spicy)
Mix well, boil for 2-3 minutes and add a small sprinkle of gluccie while whisking. Allow to thicken another minute or so. Set aside.
Using butter lettuce leaves as wraps, fill with chicken, Asian salad, carrots, cabbage, and sweet chili sauce and dip into peanut sauce. Thank me later.

Caramel Mocha Trimmy Oatmeal!
I was pretty thrilled with this...my coffee AND breakfast in one bowl?
1 cup coffee (strong)
1/2 cup almond milk
1/2 cups old fashioned oats
2 tbs steel cut oats
1 tbsp whey
1 tsp MCT
2 pinches of salt
1 tbs cocoa
2 doonks Stevia (or 2 tbs gentle sweet)
1 tsp vanilla (I used Mexican)
Capful caramel extract(1/2 tsp)
Whiz up the MCT, whey and coffee together. Add old fashioned oats, steel cut oats, almond milk, coffee/ MCT/whey mix and salt to pan. Cook on medium for about 5 minutes. Remove from heat and add remaining ingredients. Mix well and shovel it in.
