Cilantro Lime Pork Tacos

WOW! The flavor of these slow cooked tacos is amazing! Now I am using a 1 LB pork loin roast in a 1.5 qt slow cooker. You can double the recipe based on how much pork you are using. On a regular full sized slow cooker it will take about 10 hours.

Here is my recipe:
1 LB pork loin roast
1 clove garlic-slivered
1 lime zested & juiced
1 pkg of taco seasoning
1/4 c Apple cider vinegar
1 TBLS Brown sugar
1/2 med Onion sliced
1/2 c chopped Cilantro

Slice onion and put in bottom of slow cooker. Mix line zest & juice, taco seasoning, brown sugar & vinegar in small bowl. Set aside.

Dry roast with paper towels and make slits on all sides pushing garlic slivers in slits.

Holding roast over slow cooker drizzle sauce on all sides making sure to cover all the meat.

Cook on low 6-10 hours depending on what size slow cooker you use.

Remove meat & onions. Shred meat & chop onions and add chopped cilantro. Put juice in saucepan from slow cooker and crank the heat to boil down to half. Return both meat & reduced sauce to cooker, heat through & serve on flour tortillas with shredded Jack, cheddar, green cabbage, sour cream & Avocado.
Makes about 7-8 tacos.

You may double the ingredients based on your meat weight.
