Almond Crescent Cookies
Ingredients:
1 cup Butter (softened)
1/3 cup Sugar
1 pkg Vanilla Sugar
1/4 tsp Salt
1-1/2 cups Flour (sifted)
2/3 cup Almonds (ground)
3/4 cup Powdered Sugar (sifted)
1 tsp Cinnamon
Line Baking Sheet with Parchment Paper.
Combine Powdered Sugar and Cinnamon, set aside.
Cream together Butter and Sugar.
Scrape down bowl and add Vanilla Sugar, Salt, Flour and Almonds. Mix until dough comes together. Scrape down bowl and form a ball.
Cover dough with plastic and chill for 1 hour.
Preheat Oven 350° F
Remove plastic and use 1 tbsp of dough, roll & form between your hands into a crescent shape, repeat and line Baking Sheet.
Bake 20 Minutes or until set.
Place cookies on wire rack.
Roll slightly warm Almond Crescent Cookies in Powdered Sugar Mix.

Buñuelos Jarochos
Ingredients:
600 gr Flour, sifted
1 cup Milk, lukewarm
1/2 cup (divided) Water, lukewarm
150 gr cooked/mashed Potato
Good Pinch of Salt
1 Egg
4 tbsp Sugar
2 tbsp Butter, melted
1-1/2 tsp Yeast
30 oz Oil for frying
Topping:
3 tbsp Sugar
1 tsp Cinnamon
Whisk together Sugar, Yeast & 1/4 cup of Water, rest until bubbles form.
Add Potato, Egg, Vanilla & Butter, whisk well.
Add Flour, Salt & Milk use Dough Hooks and mix. Add rest of Water and continue mixing until everything comes together and Dough is smooth, elastic and not to sticky.
Could take 15 - 20 Minutes with a hand mixer.
Coat a large bowl with Oil, place Dough inside and cover with Kitchen Towel.
Rest for 1-1/2 hours in a warm place.
Combine Sugar & Cinnamon, whisk well and set aside for Topping.
Heat Oil in a med sized pot. (Submerge handle of wooden spoon, if bubbles form Oil is ready)
Coat your Hands lightly with cold Oil.
Pinch off a Golf Ball sized piece of Dough.
Stretch out the Dough & push a hole in the center forming a circle.
Place carefully in Oil, put wooden spoon handle in middle of Dough and spin in a circle until desired shape.
Fry one side, then flip until golden on both sides.
(about 1 minute on each side)
Remove, letting the extra Oil drip off.
Place on Paper Towel.
Repeat with rest of Dough.
Before serving sprinkle with Cinnamon Sugar.

Cream together Butter & Brown Sugar.
Add one Egg at a time, plus mashed Bananas.
Incorporate Flour Mixture in batches.
Mix in chopped Walnuts.
Fill prepared Loaf Pan and top with halved Banana & Walnut Halves (pushing down softly).

Bake 60-65 Minutes or until tester comes out clean.

Ingredients:
1-3/4 cups Rice (your choice of Rice)
1 cup Coconut Milk
2-1/2 cup Water
1 tsp Salt

6 Basil Leaves
Rinse, drain & dry the Rice.
On high heat melt Coconut Oil.
Add Rice and cook 4-5 Minutes until lightly toasted.
Add Coconut Milk, Water, Salt and Sugar, combine well.
Bring to a boil, cover and lower the heat.
Simmer 15 Minutes or until liquid is absorbed, remove from heat.
Cut Basil Leaves on the bias.
Use a fork to fluff the Rice, sprinkle with Basil.

Baking Spray
Line Springform with Parchment Paper, coat with Baking Spray.
Preheat Oven 350° F
Combine Flour, Salt, Baking Powder & Cornstarch, whisk well and set aside.
Cream together Butter, Brown Sugar & Sugar.
Add one Egg at a time & Zest of one Lemon.
Incorporate half of Flour Mixture, Milk & rest of Flour, set aside.
Combine Blueberries, Sugar and 2 tbsp Lemon Juice, mix well.
Pour Blueberries in prepared Springform, spread out evenly.
Top with Cake batter.
Bake 60- 65 Minutes or until tester comes out clean.
Cool Cake completely, remove Springform.
Flip Cake upside down onto serving platter.
Refrigerate for 1 hour before serving.

Tostadas
Ingredients:
makes approx. 16 Tostadas
16 Crunchy Tortillas, 6" (Tostadas)
8 Roma Tomatoes
1 Cucumber
1 Red Onion
16 Shrimp (frozen) optional
1 Jalapeno
1 bundle Cilantro
Salt
Pepper
Refried Beans (recipe on our rumble)
1/2 sm Green Cabbage (sliced)
3 Avocados (sliced)
Sour Cream
Dried Cheese (crumbled)
8 Radishes (sliced)
2 Lemon (wedges)
Cut each Roma Tomato in half, remove the core and juice. Small dice the Tomatoes and set aside
Peel stripes of the Cucumber, cut off ends. Cut Cucumber in half lengthwise and remove the seeds. Small dice and set aside.
Chop Red Onion and set aside.
Thaw frozen Shrimp and remove the tails. Cut each Shrimp in thirds and set aside.
Chop Jalapeno and set aside.
Chop Cilantro and set aside.
Use large bowl and combine Tomatoes, Cucumber, Red Onion, Shrimp, Jalapeno and Cilantro. Season with Salt & Pepper to taste, mix well.
Cover with plastic wrap and refrigerate for 1 hour.
Remove plastic, stir Tomato Mixture to combine the flavors.
To build a Tostada:
Spread a thin layer of warm Refried Beans over the Crunchy Tortilla. Add a spoon full of Tomato Mixture, sprinkle shredded Cabbage on it. Top with Avocado slices, a dollop of Sour Cream and crumbled dried Cheese. Serve with a Lemon wedge and sliced Radishes on the side.

Combine all Spätzle Ingredients, mix to a smooth Batter.
Rest the Batter while you bring a large Pot with Water to a boil, add a good Pinch of Salt.
Push Batter (in batches) through back of Grater or Spätzle Maker.
Let it come up to a boil, stir.
Remove from heat, drain of Water, set aside.
Melt 2 tbsp Butter in med Skillet, add Onions and season with a Pinch of Salt & Pepper.
Caramelize the Onions, remove some for Topping.
To the rest add Nutmeg, Parsley and Milk, combine n keep warm.
In large Skillet on high heat melt 1 tbsp Butter, add Spätzle and Crust them lightly.
On low heat mix in Caramelized Onion Mixture and Cheese.
Top Käsespätzle with reserved Caramelized Onions and sprinkle with Green Onions.

Pour Egg Mixture over everything, let the Eggs set a little, scramble everything together.
Turn the Heat off, sprinkle with Mozzarella & incorporate Cheese.

Bake 12-14 minutes, or until set. Cookie should still be pale.
Rest Cookies 5 minutes on the sheet, then transfer to wire rack to cool.
Repeat with the rest of the dough, which makes a total of 20 Cookies.
Dust completely cooled Cookies generously with Powdered Sugar.

Combine flour, cocoa powder and finely chopped Walnuts, set aside.
In Food Processor combine butter, sugar, salt, vanilla and egg yolks, scrape down sides when needed.
Add flour mixture and pulse until dough comes together.
Place dough in bowl, cover with plastic wrap and refrigerate for 1 hour.
Preheat oven 350°F
Line cookie sheet with baking mat.
Shape 26 balls, 20 gr each.
Dip each ball in egg whites, cover with coarsely chopped Walnuts & place on cookie sheet.
Make indentation with the back of 1/2 tsp measuring spoon in each ball.
Bake 15-18 minutes, repeat indentation if needed.
Rest cookies 5 minutes on sheet, then place on wire rack to cool completely.
Fill the middle of each cookie with Nutella.
(Tip: if your Nutella is too hard, microwave for a few seconds)
Either use a piping bag or small spoon to fill the cookies.

Healthy Cucumber Juice
Ingredients:
2 Cucumbers (peeled n chopped)
2 Celery Ribs (chopped)
1 Lemon (peeled n quartered)
Feed Lemon, Celery and Cucumber successively through the feeding tube
of your Juicer, let the Machine run until the Liquid stops flowing.
Remove, stir and serve Juice.

How to bake mixed berry crumble bars
A good way to use fresh Berries, bake the delicious Mixed Berry Crumble Bars, a wonderful Summer Dessert.
Mixed Berry Crumble Bars
Ingredients:
Dough/Topping
3 cups Flour
1 cup Sugar
1/2 tsp Salt
1 tsp Baking Powder
1 tsp Nutmeg
1 Egg
1 tsp Vanilla
1 cup Butter, cold/cubed
1/4 cup Oats
Filling:
4-1/2 cups mixed Berries
(we used Strawberries/Blackberries)
Zest of a Lemon
1/2 tsp Nutmeg
1/2 cup Sugar
5 tsp Cornstarch
Combine Flour, Sugar, Salt, Baking Powder & Nutmeg.
Whisk together Egg & Vanilla and add to Flour Mixture.
Work in Butter until crumbly.
Remove 1/3 of Dough for Topping, add Oats & set aside.
Preheat Oven 350° F
Line 9×13 pan with Parchment Paper, coat with Cooking Spray.
Press in remaining Dough to form a Crust.
Combine all Filling Ingredients and spread out Berry Mixture evenly over Crust.
Sprinkle Crumble Topping over Berries.
Bake 50 - 55 Minutes.
Cool completely on Wire Rack.
Refrigerate overnight, to make the cutting easier.
Cut in 15 equal sized Mixed Berry Crumble Bars.

How to make super easy mini pizzas
You don't need to make dough, just use Rolls and make delicious super easy Mini Pizzas. Top them with your favorite Pizza toppings, great for Parties, Lunch or Dinner with a Salad on the side.
6 Mini Pizzas
Ingredients:
3 Rolls
14 oz Pizza Sauce
8-10 oz Mozzarella, shredded
3 oz Ham, diced
2-3 Mushrooms, sliced
18 Pepperonis, quartered
3-4 Sweet Peppers, sliced
1/2 Red Onion, sliced
2 Green Onions, chopped
4-5 tbsp Ricotta Cheese
Line Baking Sheet with Parchment Paper.
Preheat Oven 425° F
Cut each Roll in half and place (cut side up) on Baking Sheet.
Toast in Oven for 5 Minutes
Spread each half equally with Pizza Sauce.
Sprinkle with Mozzarella Cheese.
Top with Ham, Mushrooms, Pepperonis, Sweet Peppers, Red Onion and small Ricotta Cheese dollops.
Sprinkle with
Mozzarella Cheese.
Place on Baking Sheet.
Bake 12-14 Minutes.
Sprinkle with Green Onions & serve.

How to make the Best Tossed Salad
This is a great Recipe for a Fresh Tossed Salad, that you can dress with your favorite Vinaigrette or Salad Dressing.
Tossed Salad
Ingredients:
1 Head Iceberg Lettuce
4 Roma Tomatoes
1 cup Corn
3 Green Onions
2 Persian Cucumbers
5 Radish
3 Carrots
Cut Iceberg Lettuce and Tomatoes bite sized.
Rinse and dry Corn.
Cut Green Onions on the bias.
Slice Persian Cucumbers.
Cut Radish and Carrots in half moons.
Combine all Ingredients in large bowl, toss Salad.
Serve and drizzle with your favorite Vinaigrette or Salad Dressing.
(Tip: if you dress individual servings, keeps the rest of tossed Salad crisp)

1/4 cup fresh lemon juice
1 small garlic clove, grated
1 teaspoon Dijon mustard
1/4 teaspoon sea salt, more to taste
Freshly ground black pepper

Balsamic Vinaigrette Ingredients:
2 tablespoons honey
1 tablespoon dijon mustard

1/2 teaspoon freshly crushed black pepper finely ground
1 large garlic clove minced
1/4 cup balsamic vinegar
3/4 cup extra virgin olive oil
Ranch Dressing Ingredients:
½ cup mayonnaise
¼ cup milk or buttermilk
2 tablespoons fresh parsley finely chopped
1 teaspoon dried dill
1 teaspoon garlic powder
